    Nishide Shuzo 100 Year Junmai Daiginjo Sake is a premium Japanese sake produced by Nishide Shuzo, that has only 3 employees, just as it has had for the past 5 generations, located in the Ishikawa prefecture in Japan. This sake is made using traditional methods, with a focus on using the highest quality ingredients and a dedication to craftsmanship. The sake is made from locally grown Gohyakumangoku rice, which is polished to 50% of its original size to remove impurities and enhance the flavor profile. Also the brewery use a yeast known as Kuratsuki Kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes. Ishikawa’s 17th century Kutani Yaki porcelain artwork gracing this bottle helps tell the story that this sake has been made with local ingredients only. Nishide Shuzo 100 Year Junmai Daiginjo Sake has notes of apricot and young banana that starts off soft and mild, giving way to the smooth umami of sake rice, finishing dry with balanced acidity. This sake is made using traditional methods and high-quality ingredients, including Tamazakae rice that is highly polished, and slowly fermented at a lower temperature.     About Borgogno

    Founded in 1761, Borgogno is the oldest continuously operating winery in Barolo. Cesare Borgogno expanded the winery’s production in the 1920s and commercial success followed as he became one of the first winemakers from Piedmont to ship wines abroad.
