This sake is made using traditional methods, with a focus on using the highest quality ingredients and a dedication to craftsmanship. The sake is made from locally grown Gohyakumangoku rice, which is polished to 50% of its original size to remove impurities and enhance the flavor profile. Also the brewery use a yeast known as Kuratsuki Kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes.
