    All batches of Bush Vine Grenache are crushed as separate parcels to either static pumpover fermenters or open top fermenters. The majority of batches are fully destemmed, however for some the stems are left on to contribute another flavour dimension. This extended maturation helps to contribute an even greater complexity and individuality to the wine. After draining and pressing off skins, all batches are racked into older American, French and Hungarian hogsheads for six months maturation. It has a very succinct, almost understated bouquet, here a mixture of red and black fruit, cold limestone and crushed rose petals (the latter observed when the wine was in barrel). It is not a set of aromatics that go out and grab your attention, rather the sophistication creeps up on you. The palate is medium-bodied with crisp tannin. Unlike the Deuxième Vin, there is real structure and backbone here, a gentle but insistent grip in the mouth. It errs towards black instead of red fruit, intermingling with sage and cumin, then segueing into a precise finish with a long, lingering ferrous finish (à la Pomerol!), finally a hint of oyster shell on the aftertaste. It is one of the most subtle Cheval Blancs that I have tasted in a long time, although it will doubtlessly be deceptively long lived. This is a serious Cheval Blanc for serious oenophiles."

    About Chateau Pape Clement

    The first harvest took place in 1252. For more than 750 years, therefore, Château Pape Clément has been producing fine wines on the same terroir. At this time, it was called Domaine de la Mothe.

    Following a painful episode of hail in 1937, which damaged the vineyard, the land was bought in 1939 by the agricultural engineer Paul Montagne, who signalled the rebirth of the estate by replanting the vines and renovating the cellars. As early as 1953, successful vintages flourished again, but once again, from 1975 onwards, a lack of investment detracted from quality for a period of around ten years.

    At the turn of the 1980s, Bernard Magrez, a passionate wine entrepreneur, took the reins at the Château and was to give this grand cru classé an unprecedented international aura. Thanks to hard work, constant questioning, the alliance of tradition and innovation and a remarkable terroir, Château Pape Clément, Grand Cru Classé de Graves continues each year to amaze wine lovers with a quality exceptional.
