Yamagata prefecture has established itself as one of the top Ginjo and Daiginjo producing region of Japan and backs up the claim with locally developed rice strains best suited for the terroir. Yamagata is the first to implement Geographic Indication (GI). Sawane is currently in review process. The Gokujo has already been approved.
Sawane means harmoniously brewed in Yamagata.
Using locally developed Dewanosato rice and Yamagata Ginjo yeast, Sawane opens with a bright and fruity aroma of fresh pear and finishes with a crisp but fruity finish. This sake’s namesake is Benten, the beautiful goddess of wisdom, music and good fortune. May she bring you the best of luck.
