Dassai Beyond Junmai Daiginjo Sake

Dassai Beyond Junmai Daiginjo is a premium Japanese sake produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan. It is one of the most exclusive sakes in the world, and is made using a special, limited edition rice variety. Junmai refers to sake that is made purely from rice, water, yeast, and koji. Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai Beyond Junmai Daiginjo is made using the best of  Yamada Nishiki ricea. This rice is specially grown by selected farmers allowing it to be one of the most highly-polished rice varieties used in sake production. The sake is characterized by a complex and refined flavor profile, with a delicate sweetness and a smooth, creamy texture. It has notes of pear, melon, and other fruits, with a hint of umami and a clean, refreshing finish. Due to its limited production and high quality, Dassai Beyond Junmai Daiginjo is considered one of the most exclusive sakes in the world. It is often served on special occasions or as a gift to those who appreciate fine sake, and pairs well with a variety of Japanese cuisine, particularly rich, flavorful dishes.
 

Tatenokawa Tatenyan Junmai Daiginjo Sake

Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.
Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.
With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt.

Pommery Brut Royal is the essence of the Pommery style: liveliness, fresh, finesse. From 40 selected villages in the Côte des Blancs and Montagne de Reims and other areas in the Champagne region where the liveliness and delicacy of the chardonnay grape is enhanced by the climate.

Louis Jadot Corton-Charlemagne Grand Cru 2019

This Grand Cru is shared by the two villages of Aloxe-Corton and Pernand-Vergelesses in the north of the Côte de Beaune. Jadot’s vineyard area has been in the family since the 19th century and faces south. This Chardonnay wine is fermented and matured in oak barrels for a total of 18 months. This powerful and mineral wine has intense fruit, flower, pepper and cinnamon aromas and flavors. It is essential to age this wine in the bottle: 10 to 20 years will bring out the best in its development. Pair with haute cuisine, especially fish, shellfish and white meats in cream sauces.

Louis Jadot Charmes-Chambertin Grand Cru 2019

Charmes-Chambertin is one of the eight Grands Crus of the commune of Gevrey-Chambertin, the most northern of the great communes of the Côte de Nuits. The vineyard of Charmes-Chambertin lies on an east-facing slope on a site that was formerly a field of grain (Charmes comes from “chaume,” meaning thatch). The Pinot Noir grapes are fermented in vats for up to one month, and then the wine is matured in oak barrels for 18 to 20 months before bottling. This wine is deeply colored, with an intense bouquet of black currants and other black and red berries. The mature wine often has aromas of musk or licorice. Made for aging, the wine will improve for 20 to 25 years in the bottle. Serve with elaborate and strongly flavored foods such as mutton, boeuf bourguignon, coq au vin, game or game pâté and strong cheeses.

Oze x Rose Junmai Daiginjo Sake

The Oze x Rose Junmai Daiginjo is a premium Japanese sake produced in Gunma prefecture by Ryujin Shuzo Ryujin Shuzo's underground water is very soft and feminine, lending to their brewers the power to draw out the hidden flavors in their rice. Their aim is to create flavorful, mellow, high quality sake that warms the heart upon drinking. They like to combine their traditional skills and methods with the brewer's heart. To this end, they work hard to improve their skills every day to work towards the next challenge, and brew excellent beer in the off season. A lovely rose-colored sake that exists within a sphere of balance between sweet and tart, and has a flavor that resembles wild strawberries. Brewed with the exceedingly difficult-to-use red yeast, it has been said that if a Junmai Daiginjo is the most difficult grade of sake to brew, this Rose Junmai Daiginjo was 10 times as difficult, so many brewers are unable to work with it. Keep refrigerated.

Louis Jadot Echezeaux Grand Cru 2019

Part of Flagey-Echézeaux, to the south of Clos Vougeot, this Grand Cru vineyard is situated on the slopes facing east–southeast on chalky soil. The Pinot Noir grapes are fermented in vats for up to one month, and then matured for 15 to 18 months in oak barrels before bottling. This powerful and delicate wine has intense red berry and spice aromas and flavors. With great length on the palate, this wine will develop favorably in the bottle for 15 to 20 years. Serve with roasts, game and fine cheeses.  

Chateau des Jacques Morgon 2019

Atop the hierarchy of Beaujolais Crus are Moulin-à-Vent and Morgon, with notable ageing potential. Morgon is robust and structured and can mature for a minimum 5-20 years. Purchased by Maison Louis Jadot in 2001, this south- to southeast-facing vineyard is situated on the slopes over the village of Villié Morgon. It covers 87.5 acres of the Morgon appellation, one of the 10 Crus of Beaujolais. This wine is vinified in vats for 10 to 20 days and then matured in oak barrels before bottling. Very deep in color, this wine - blend of three single vineyards (Bellevue, Côte du Py & Roche noire) - shows a brilliant and large aromatic palette (spices, ripen black fruit). On the palate, the tannins are still a bit firm - which indicates the potential of ageing – and they are well balanced by a great tension. A perfect partner for charcuterie, pasta in a rich cream sauce, pizza and pretty much any meat. Wine & Spirits | 92 points: "Cool and lithe, this earthy Morgon has flavors of stewed plums and black currants, held by pointedly brisk tannins that have the chew of blueberry skins. It's a powerful gamay, with a scent one panelist called out as Himalayan kush - and offers a classic companion to charcuterie."
