Domaine Anne Gros is well-known for producing exceptional Pinot Noir from the appellation of Vosne-Romanée. The owner Anne Gros is widely recognized as one of the leading winemakers in Burgundy. She took over the estate from her father, Francois Gros, in the late 1980s. Anne Gros is known for her meticulous approach to winemaking, with hand-picking the grapes, fermenting with natural yeasts, and using French oak barrels. She also practices minimal intervention in the vineyards, using sustainable and organic farming practices. This Bourgogne Chardonnay 2020 is special selection of fruit from vines planted close to Anne’s vineyards, just outside of Vosne. The wine is aged for one year in French oak casks (500L), with 25% new oak. Expect fresh acidity, medium body, with notes of citrus blossom and fresh pineapple, and a wonderful lacy texture. -

They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. The aroma is modest and vaguely citrusy, and the flavor has a hint of sourness with solid umami, yet the finish is clean and pleasant. Enjoyed best with both Asian and western seafood or fried/fatty dishes. -

Yuki No Bosha Junmai Daiginjo "Cabin in the Snow" Saiya Brewery doesn't allow high demand speed their production. The sake they brew follows a strict discipline to fine quality. The brewers do all they can to insure a healthy and clean environment and level of strong, consistent effort in brewing. The composition of their sake doesn’t take on a strong aroma (known as uwadatsuka), instead it has a strong aftertaste, or fukumi. This achievement takes studied time, brewing at low temperatures without exposure to air. Founded in 1939, the Fuji brewery is managed by the 3rd generation Imaoka family in the town of Izumo. The town is famous for its shrine, Izumo Taisha, built in the 8th century. This shrine is regarded as the oldest and most important shrine in all of Japan. In its name, Izumo Fuji sake pays tribute to both this shrine and to Mt. Fuji, the most loved and revered symbol of Japan. The Imaoka family brews using old school and traditional methods without modern machines. They do everything by hand: steaming using an old-fashioned Japanese steamer, koji making, and pressing by fune press, or wooden vat, a very gentle method.It shows pineapple, candied sugar, subtle pear on the nose. On the palate it is juicy, soft and melting. -

Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.

Highly limited, competition sake that has won gold medal 19 times at the Japanese National Sake Competition Kachou Gesseki is the competition-grade daiginjo from Yuki No Bosha. It has consistently won top marks at the Tohoku Region and Akita Prefecture sake contests. Mr. Toichi Takahashi is the brew master of YUKI NO BOSHA and has been instrumental in the local sake industry of Akita. He currently sits as an advisor on the Sannai Toji Guild of Akita where he helps to elevate sake making skills and educate younger generations of brewers. Takahashi-toji is committed to a method of sake making that shows the utmost respect for the natural environment. In order to protect the microorganisms of Saiya brewery there are several things the brewery does not do: they do not stir the fermentation tanks, they do not dilute the sake, they do not use charcoal filtration, and they do not use chemicals to clean the brewery. In order to maintain unique characteristics in the sake, Takahashi-toji only uses proprietary yeasts, some 40 years old. Additionally, he works closely with contract Yamada Nishiki rice farmers in Hyogo, giving direction on rice patty management to ensure high quality over yield. For all this, Takahashi-toji has been recognized as a National Treasure of Japan. It is aromatic like a perfume, shows blood orange and peach on the palate, and finishes with long, elegant honey notes. Serve chilled to room temperature with omakase and kaiseki. -

Founded in Jerez de la Frontera, Andalusia, in the heart of Sherry country, it is dedicated to the production of high quality sherries. The Sherry triangle, made up of Jerez de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda, has a unique microclimate influenced by the surrounding Atlantic Ocean and Guadalquivir and Guadalete rivers. Production is dominated by the Palomino variety, and vines are planted in the white Albariza soil, with high chalk content which is excellent for retaining moisture. Ramos Pinto Duas Quintas 2021 is a red wine produced by the Ramos Pinto winery in Portugal's Douro region. It is made from a blend of two different grape varieties: Touriga Nacional and Touriga Franca. In the glass, the wine has a deep ruby color with violet hues. On the nose, it offers aromas of blackberry, cassis, and dark cherry, along with hints of tobacco, cedar, and vanilla. On the palate, the wine is full-bodied with firm tannins and a good balance between fruit and acidity. Cantine Bertani has been making wines in the Veneto region of Italy for more than 150 years. They have consistently strived to combine tradition and research to create wines of uncompromising quality with a distinct identity. As part of the ripasso technique, the wine is 'passed over' dried grapes to contribute depth and character. Ripasso styles, such as this one, can therefore offer the best of both worlds: notes of ripe red cherry and underbrush (that you often find with Valpolicella), alongside those of spice and chocolate (often found with Amarone). This wine is full-bodied with velvety tannins, aged in barrels and cement vats before spending three further months in bottle prior to release. This rich Ripasso would complement a variety of Italian dishes, from grilled and roasted meats to risotto with porcini mushrooms. -
