Fuku Chitose Yamahai Junmai Sake
Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.
Tasting Note: Savory aromas of pumpkin and spices with complex earthy flavors. The finish is dry and long lasting.
Food Pairing: Serve at room temperature or warmed with slow-cooked pork belly, braised short rib, and nutty cheese.
Koshi-no-Kanchubai Silver Junmai sake
A classic Gohyakumangoku smooth sake by Niigata Meiji. The Silver-label Junmai is a feat of delicate fruit aromas. This soft, pleasant sake is a major crowd pleaser with hints of banana and citrus beneath a gentle rice flavor, followed by cleansing finish. Pairing with both eastern and western dishes, and excellent at every temperature.
Rivetto Barolo Briccolina 2014
Briccolina was the pioneer vineyard for our biodynamic approach and is now the only Barolo cru granted with the Demeter certification. It is a vineyard-garden, entirely worked by hand. It undergoes very long macerations during vinification.

Chateau Haut-Bailly 2015
The outstanding weather in 2015 resulted in rich, fruity wines with great balance and excellent structure. Made from very ripe fruit, they have a perfect harmony and a remarkable underlying softness. Powerful Cabernets dominate the blend. Rich, fleshy and dense, they harmonise with the well-structured Merlots. The Petits Verdots are dark and spicy, and bring a touch of complexity to the wine.

Domaine Huet is well known for the age worthy white wines made with Chenin Blanc. For many insiders, the argument over Vouvray’s greatest vineyard comes down to two sites: Le Mont and Clos du Bourg. Undisputably a grand cru vineyard, Le Mont enjoys a choice site on the Première Côte. With less clay and more stone than Le Haut-Lieu, Le Mont yields young wines of intense minerality. With age, the wines develop great length and finesse. This wine has notes of white flowers, citrus fruit and apple with great tension on the palate and a long mineral finish. Can be aged for at least 10-15 years.
