Chateau de Beaucastel Chateauneuf-du-Pape Rouge 2019

By |December 9, 2022|Categories: , , , , , |

Château de Beaucastel has long been regarded as one of the greatest wines in France. It is notorious for its elegance, balance and ageing potential. Beaucastel has an exceptional terroir at the Northern limit of Châteauneuf du Pape, exposed to the Mistral wind. All thirteen varieties of the appellation have been organically grown since the sixties. Magnificent deep-colour of an intense ruby-red. Typical of Beaucastel, the nose is rich and complex but very fresh, with an opulent aromatic bouquet dominated by notes of fresh fruit and spices. Full,-bodied, soft, eminently silky, this very elegant wine reveals a superb, dense structure on the palate, very fine tannins and gourmet aromas of fresh red fruit, currants and noble spices. The finish has great length, ample and harmonious. A fruity vintage with great aging potential.

Imayo Tsukasa Koi Junmai Daiginjo Genshu is a premium sake produced by Imayo Tsukasa Sake Brewery, located in the Niigata prefecture of Japan. This sake is made using high-quality Gohyakumangoku rice, which is polished to a ratio of 50%, resulting in a refined and complex flavor. The aroma of Imayo Tsukasa Koi Junmai Daiginjo Genshu is elegant and fruity, with notes of peach, pear, and melon. On the palate, it is full-bodied and rich, with a complex and layered flavor that is both sweet and savory, with a hint of umami. It has a long and smooth finish, with a subtle and lingering aftertaste. What sets Imayo Tsukasa Koi Junmai Daiginjo Genshu apart is that it is a genshu, which means that it is undiluted. This gives the sake a more full-bodied and intense flavor profile, with a slight kick of alcohol. The brewing process of Imayo Tsukasa Koi Junmai Daiginjo Genshu is carefully controlled to ensure the highest quality. The rice is milled, washed, and steamed before being fermented with yeast and koji mold. The sake is then pressed, filtered, and bottled to preserve its delicate flavor and aroma. Imayo Tsukasa Koi Junmai Daiginjo Genshu is a premium sake that is highly valued by sake enthusiasts for its complex and nuanced flavor profile. It is best served chilled and can be enjoyed on its own or paired with a variety of Japanese dishes, including sushi, sashimi, and tempura. It is a perfect example of the high-quality and traditional craftsmanship that is synonymous with Japanese sake. Enjoy it chilled in a white wine glass

Subtle hint of umami rich kombu dashi with slight pepperiness ending in warm aroma freshly cooked rice. Dry and bright acidity reminiscent of a Gruner Veltliner or Sancerre followed by rich savoriness with a slight hint of ripe banana in the finish. Savory finish that cleanses the pallet for the next bite.

Gian Luca Colombo Barolo DOCG 2018

The fruit is sourced from the following crus: Bricco Ambrogio (Roddi village), Roere di Santa Maria (La Morra), Bussia (Monforte d’Alba). The emphasis on Roddi and La Morra help explain the airy style of the wine, a lighter style than wines coming from the villages of Barolo or Serralunga, for example. Gian Luca explains about the 2018 vintage, a relatively cool year: a vintage that gave us wines that are really charming and approachable when young; the wines are already expressive, fruity, aromatic and tannins smooth and soft.

Suigei Kouiku 54 Junmai Ginjo Sake

By |January 19, 2023|Categories: , , , |

The only Sake Brewery in Kochi City . They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. The aroma is modest and vaguely citrusy, and the flavor has a hint of sourness with solid umami, yet the finish is clean and pleasant. Enjoyed best with both Asian and western seafood or fried/fatty dishes.

Clos Saint-Jean Chateauneuf-du-Pape La Combe des Fous 2015

Robert Parker's Wine Advocate - 97 points:  "The 2015 reds from these two brothers are some of the gems in the vintage. The 2015 Châteauneuf du Pape La Combe des Fous is another sensational wine. Full-bodied, gorgeously concentrated and yet with the ever present elegance and finesse this cuvée always possesses, it offers layers of black raspberries, crème de cassis, white flowers, licorice and cured meat-like aromas and flavors. It will certainly be one of the top handful of wines in the vintage."
