Suigei Kouiku 54 Junmai Ginjo Sake

The only Sake Brewery in Kochi City . They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. The aroma is modest and vaguely citrusy, and the flavor has a hint of sourness with solid umami, yet the finish is clean and pleasant. Enjoyed best with both Asian and western seafood or fried/fatty dishes.

The soft floral notes of Chardonnay are integrated with the structure and high acidity of Pinot Noir, giving rise to a sparkling wine of great natural complexity, persistent and very deep. The wine has pale yellow color, fine effervescence and elegant pearlescent. Elegant floral aromas with soft notes of white berries, complexed with characters of fresh cream and fine toasts. Mouthfeel: Creamy, persistent and very deep on the palate, with great natural acidity that provides breadth and a vibrant and refreshing finish to the mouth.

Yuki No Bosha Junmai Daiginjo "Cabin in the Snow" Saiya Brewery doesn't allow high demand speed their production. The sake they brew follows a strict discipline to fine quality. The brewers do all they can to insure a healthy and clean environment and level of strong, consistent effort in brewing. The composition of their sake doesn’t take on a strong aroma (known as uwadatsuka), instead it has a strong aftertaste, or fukumi. This achievement takes studied time, brewing at low temperatures without exposure to air. The result allows for the aromas of the yeast to blend beautifully into their sake.

Earthy, rustic, elegant, fruity, crisp, peach, roasted sage, long & layered finish. The brewmaster (toji) for Saiya brewery has been recognized as a cherished craftsman by the Emperor of Japan.

Fuku Chitose Yamahai Junmai Ginjo Sake

Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.

Nose: banana & toffee on the nose

Palate: fruity on the palate with notes of pear & lychee, rich body.

It should be served chilled and paired with light dishes like fish, chicken and salad

Chateau des Jacques Morgon 2019

Atop the hierarchy of Beaujolais Crus are Moulin-à-Vent and Morgon, with notable ageing potential. Morgon is robust and structured and can mature for a minimum 5-20 years. Purchased by Maison Louis Jadot in 2001, this south- to southeast-facing vineyard is situated on the slopes over the village of Villié Morgon. It covers 87.5 acres of the Morgon appellation, one of the 10 Crus of Beaujolais. This wine is vinified in vats for 10 to 20 days and then matured in oak barrels before bottling. Very deep in color, this wine - blend of three single vineyards (Bellevue, Côte du Py & Roche noire) - shows a brilliant and large aromatic palette (spices, ripen black fruit). On the palate, the tannins are still a bit firm - which indicates the potential of ageing – and they are well balanced by a great tension. A perfect partner for charcuterie, pasta in a rich cream sauce, pizza and pretty much any meat. Wine & Spirits | 92 points: "Cool and lithe, this earthy Morgon has flavors of stewed plums and black currants, held by pointedly brisk tannins that have the chew of blueberry skins. It's a powerful gamay, with a scent one panelist called out as Himalayan kush - and offers a classic companion to charcuterie."

Pommery Brut Royal is the essence of the Pommery style: liveliness, fresh, finesse. From 40 selected villages in the Côte des Blancs and Montagne de Reims and other areas in the Champagne region where the liveliness and delicacy of the chardonnay grape is enhanced by the climate.

Pale yellow with faint green highlights. Lively and cheerful, fresh, light-hearted, fine, delicate and generous. Elegant and lively. Small assertive notes of red fruits. A rounded, rich, delicate wine that lingers in the mouth. In short, a clean taste with no dryness. A very smooth wine which never wanes on the palate.  

Yuki No Bosha Kachougesseki Daiginjo Sake

Highly limited, competition sake that has won gold medal 19 times at the Japanese National Sake Competition Kachou Gesseki is the competition-grade daiginjo from Yuki No Bosha. It has consistently won top marks at the Tohoku Region and Akita Prefecture sake contests. Mr. Toichi Takahashi is the brew master of YUKI NO BOSHA and has been instrumental in the local sake industry of Akita. He currently sits as an advisor on the Sannai Toji Guild of Akita where he helps to elevate sake making skills and educate younger generations of brewers. Takahashi-toji is committed to a method of sake making that shows the utmost respect for the natural environment. In order to protect the microorganisms of Saiya brewery there are several things the brewery does not do: they do not stir the fermentation tanks, they do not dilute the sake, they do not use charcoal filtration, and they do not use chemicals to clean the brewery. In order to maintain unique characteristics in the sake, Takahashi-toji only uses proprietary yeasts, some 40 years old. Additionally, he works closely with contract Yamada Nishiki rice farmers in Hyogo, giving direction on rice patty management to ensure high quality over yield. For all this, Takahashi-toji has been recognized as a National Treasure of Japan. It is aromatic like a perfume, shows blood orange and peach on the palate, and finishes with long, elegant honey notes. Serve chilled to room temperature with omakase and kaiseki.

The 2004 fruit remains discreet, yet more clearly defined in this second life of the Vintage. Citrusy notes of pink grapefruit and blood oranges gently cede to figs. The additional time on the lees elevates the minerality of the vintage with the sublime maturity that is Dom Pérignon’s signature. Cocoa, mocha, roasted nuts, brioche and honey. The wine balances on the edge with immediacy and surprise, evolving between tension and weightlessness. It has an extreme, tactile precision, deep and sculptural. The sensations come together in a persistent and elegant finish, underlined by sappy, licorice notes.

Champagne Alexandre Bonnet Blanc de Noirs is a blend of Pinot Noirs from a variety of the estate’s vineyards. The Champagne is clear, yellow with gold glints. On the nose it has refined and complex fruit aromas like pear, peach, apricot, plum, floral, honeysuckle, slightly spicy with a touch of citrus and refreshed by a minty note. On the palate it is generous and mouth-watering with an elegant and structuring mineral backbone.
