Dassai 23 Junmai Daiginjo is a premium Japanese sake that is highly regarded for its exceptional quality and complex flavor profile. It is produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan, using only the finest rice and water. Junmai refers to sake that is made purely from rice, water, yeast, and koji (a type of fungus that converts starch to sugar). Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai 23 Junmai Daiginjo is made using Yamada Nishiki rice, which is considered one of the best sake rice varieties in Japan. It has a polished ratio of 23%, meaning that 77% of the outer layer of the rice grain has been removed. This allows for a pure and delicate flavor profile with a subtle sweetness and floral aroma. Antinori Tignanello 2020

Intensely ruby red in color, Tignanello 2020 has exceptional aromatic complexity: notes of ripe red fruit especially cherries, strawberries and blackberries are accompanied by delicate floral hints of violets, mallow blossoms and roses. Its bouquet is completed by notes of roasted coffee and cocoa powder. The vibrant entry gives way to a caressing layered mouthfeel. The wine closes with spicy notes of pepper and licorice that merge with pleasant sensations of aromatic herbs for a fresh, lengthy finish.

Aging took place in French and Hungarian oak barrels, partly new and partly second passage, for a total of 15 months: after an initial period of aging the lots separately, they were blended then completed barrel aging. Tignanello, made primarily with Sangiovese and a small percentage of Cabernet Sauvignon and Cabernet Franc, underwent an additional 12-month period of aging in the bottle before being released.

The Don Melchor Vineyard is located at the foot of the Andes Mountains on the northern bank of the Maipo River, 650 m above sea level. This is one of the coldest zones of the Alto Maipo Valley, which translates to great freshness to the wine. The 2019 vintage of Don Melchor is a blend of 92% Cabernet Sauvignon, with only 5% Cabernet Franc, 2% Merlot and 1% Petit Verdot. The wine has spent 15 months aging in French oak barriques. Expect a powerful Cabernet Sauvignon with notes of blackcurrants, black cherries, herbal aromas of mint, and a dense palate with full body and firm tannins, with a long finish of vanilla and tobacco notes. Drink now, but will develop for another 15 years.

Nishide Shuzo 100 Year Junmai Daiginjo Sake is a premium Japanese sake produced by Nishide Shuzo, that has only 3 employees, just as it has had for the past 5 generations, located in the Ishikawa prefecture in Japan. This sake is made using traditional methods, with a focus on using the highest quality ingredients and a dedication to craftsmanship. The sake is made from locally grown Gohyakumangoku rice, which is polished to 50% of its original size to remove impurities and enhance the flavor profile. Also the brewery use a yeast known as Kuratsuki Kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes. Ishikawa’s 17th century Kutani Yaki porcelain artwork gracing this bottle helps tell the story that this sake has been made with local ingredients only.
