The Jansz Premium NV Rosé is based upon Jansz wines of several vintages. Specially selected and crafted individual batches from cool climate locations in Tasmania, form this wine. Every site used to source grapes is specifically designated to growing fruit for sparkling wine. All batches are kept separate during winemaking to maximise blending options and the complexity of the final wines. The wine then goes through secondary fermentation in bottles and is aged on yeast lees for as long as possible with the average age of the final blend being 18 months to two years. -

Honkara is an abbreviation for “Honjozo Karakuchi”, which is a classic type of sake. Honjozo’s are rich and robust. “Karakuchi” means it is dry. This Honkara is a wonderful representation of the style. It has a light and silky mouthfeel, some marshmallow sweetness, melon, and a crisp dry finish. It can be enjoyed chilled, at room temperature or gently warmed. Food Pairing: Serve chilled. Great with yakitori, mushrooms or other grilled meats. -
Atop the hierarchy of Beaujolais Crus are Moulin-à-Vent and Morgon, with notable ageing potential. Morgon is robust and structured and can mature for a minimum 5-20 years. Purchased by Maison Louis Jadot in 2001, this south- to southeast-facing vineyard is situated on the slopes over the village of Villié Morgon. It covers 87.5 acres of the Morgon appellation, one of the 10 Crus of Beaujolais. This wine is vinified in vats for 10 to 20 days and then matured in oak barrels before bottling. Very deep in color, this wine - blend of three single vineyards (Bellevue, Côte du Py & Roche noire) - shows a brilliant and large aromatic palette (spices, ripen black fruit). On the palate, the tannins are still a bit firm - which indicates the potential of ageing – and they are well balanced by a great tension. A perfect partner for charcuterie, pasta in a rich cream sauce, pizza and pretty much any meat. Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.
Tasting Note: Savory aromas of pumpkin and spices with complex earthy flavors. The finish is dry and long lasting.
Food Pairing: Serve at room temperature or warmed with slow-cooked pork belly, braised short rib, and nutty cheese.

Rotlay is a parcel of vines within the larger Sonnenuhr vineyard, vinified separately for this bottling thanks to the unusual beauty and complexity of its wines. The Sonnenuhr (‘sundial’) vineyard itself is one of the most celebrated in the Mosel, and this precipitously steep part of it yields a wonderful example of the vineyard’s style in this cool corner of the Mosel: light but intensely flavored. 2020 was a warm vintage (the last in a trio of warm years) but with cooler weather at harvest. This ensured freshness and balance in the wines, which are remarkably easy to drink while maintaining all the tension and elegance typical of Mosel Riesling. The Rotlay in 2020 showcases the cool, understated style of Heinrichshof’s wines: delicate hints of spice, flowers and slatey mineral seduce rather than overwhelm the drinker. Additional complexity of flavor may be expected when aged for 4-5 years after the vintage. -

On very old vines, some perfectly golden clusters are chosen and delicately sorted grain by grain, by expert hands.Clos des Lunes Lune d'Argent 2021 has a light yellow color with pale green tints. It has intense and complex nose of exotic white fruits and citrus fruit mixed with floral notes of linden and acacia. The palate is rich, generous, ample and intensely fruity, with very good tension. The Sauvignon Blanc lemon juice deli- cately coats the exotic sweetness (lychee, mango) of the well-ripe Semillon. Mineral notes bringing good salinity added to this cocktail, to serve a beautiful finish. -

The only Sake Brewery in Kochi City . They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. The aroma is modest and vaguely citrusy, and the flavor has a hint of sourness with solid umami, yet the finish is clean and pleasant. Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15th generation of the family, Yasunobu Tomita, who is also the brewmaster. The Tomita’s named their sake Shichi Hon Yari, or “Seven Spearsmen,” after the leaders of the historic Battle of Shizugatake which was fought just outside their town of Kinomoto. Shichi Hon Yari Junmai is the classic representation of the brewery’s style with its traditional and modern dimensions. Earthy and rich aromatics and flavors meet elegance and softness in the finish. It aromas has notes of pink grapefruit and linden blossom notes reveal this wine’s very rich mineral quality in a poetic evocation of the sun rising over the Provence Garrigue on a summer day. On the palate the wine is ample and balanced around sensations of freshness, delicacy and sweetness. It is bursting with small fresh fruits such as the arbutus berries on the wooded hillsides of the schist terroir of the Château la Gordonne.
