Made with yeast derived from a rose flower. It looks cherry colored from the yeast but it smells like cherries too. It’s creamy and packed with umami from the cold lactic fermentation (Kimoto) and the super geeky Hyogo grown Aiyama rice only polished to 90%. Then the rose flower yeast adds a layer of refreshing acidity and a hint of sweetness. Afuri Ohana Kimoto Junmai Muroka Nama can be served chilled or room temperature, try it with grilled pork, seared steak or as you begin your afternoon.

90% polished rice balances double the typical amount of Koji with the lactic acid production of Yamahai. The 40% Koji (starch to rice converting mold) gives layers of pine nut brittle and roast chestnuts. The Yamahai lends earthy mushrooms and the highest grade Hyogo grown Yamadanishiki offers pineapple flavors often associated with Daiginjo. Earthy flavors suggested the name Terra/Y.

Sale!An icon in the region, the Allegrini family has been a pivotal part of Valpolicella’s history since the 16th century. This long winemaking tradition, combined with grapes of exceptional quality (all Allegrini wines are produced from estate-grown fruit), has led to the brand’s success and sterling reputation. The controlled drying (appassimento) of the harvested grapes, which lasts for around three to four months, brings intense aromas of undergrowth and dark fruits, such as cherries and blackberry jam. An hour in the decanter would allow this wine to further unfurl and reveal its beautiful bouquet, which also includes notes of dried violets, dark chocolate, coffee and tobacco. Intense flavors, silky-smooth tannins, and a long, dry finish feature on the powerful palate, which is balanced by the elegance and finesse of a cooler vintage. Traditionally enjoyed with game, roasted and grilled meats, casseroles and well matured cheeses. This style of wine makes an excellent match for hearty dishes. Their distinctive flavor compliments exotic sweet and sour cuisine and is therefore also perfect with Asian and middle eastern dishes.

Sale!Palazzo della Torre is one of the wines that has made Allegrini famous internationally, as it was the precursor of the double fermentation method: most of the grapes are vinified at harvest, while the remaining part is left to partially dry (appassimento). In January the wine is blended with the raisinated grapes, and a second fermentation begins. It then ages in second use French oak barriques for 15 months. A blend of Corvina Veronese, Corvinone, Rondinella and Sangiovese, this is an elegant, harmonious wine with considerable structure. Expect notes of vanilla, black pepper and cloves, with gentle nuances of raisined grapes. The palate is velvety, with soft tannins and a long and persistent finish.

Drawing on 15+ years of study, Terrasses is sourced from many of the region’s steepest and oldest vineyards—many of them north-facing to avoid the intense afternoon sun. Today, Les Terrasses is today perhaps the single finest introduction to Priorat in the marketplace.

Vermentino from the Guado al Tasso estate is straw yellow in color with greenish highlights. Excellent aromatic intensity on the nose offers notes of citrus fruit, white flower blossoms and tropical fruit. On the palate it’s savory with good persistence of flavors and a fresh and pleasant citrusy finish.

The Pian Delle Vigne estate is located 6 kilometers (3.5 miles) southwest of Montalcino. Its name comes from the eponymous area where a characteristic nineteenth century railway station is located. Pian delle Vigne Brunello di Montalcino 2019 is ruby red in color. The nose presents a complex bouquet of cherries, black cherries and blood oranges that follows over to notes of violets, vanilla, and light balsamic aromas. The palate is fresh, savory with silky, elegant tannins. The long, persistent finish is defined by notes of citrus fruit, delicate spicy aromas and hints of vanilla.

Intensely ruby red in color, Tignanello 2020 has exceptional aromatic complexity: notes of ripe red fruit especially cherries, strawberries and blackberries are accompanied by delicate floral hints of violets, mallow blossoms and roses. Its bouquet is completed by notes of roasted coffee and cocoa powder. The vibrant entry gives way to a caressing layered mouthfeel. The wine closes with spicy notes of pepper and licorice that merge with pleasant sensations of aromatic herbs for a fresh, lengthy finish.
Aging took place in French and Hungarian oak barrels, partly new and partly second passage, for a total of 15 months: after an initial period of aging the lots separately, they were blended then completed barrel aging. Tignanello, made primarily with Sangiovese and a small percentage of Cabernet Sauvignon and Cabernet Franc, underwent an additional 12-month period of aging in the bottle before being released. -

This cuvée is a selection of barrels that show a precocious liveliness and expressivity that will drink well as a youthful wine, but is built for aging. It is bottled after 18 to 20 months in barrel, and released three years after the vintage. The Allegro Pinot Noir beautifully displays the beginnings of bottle maturation, and will age gracefully for many years.

Brilliant ruby red with garnet-colored reflections, on the nose the aroma is sweet and fruity, the hints of fresh red fruit stand out, which combine perfectly with the more complex notes of licorice and pipe tobacco. The structure is powerful, and the palate is pleasantly enveloped by a consistent tannic texture, well balanced by a pleasant acidity. Extremely persistent with excellent aging potential. Out of stockYamagata prefecture has established itself as one of the top Ginjo and Daiginjo producing region of Japan and backs up the claim with locally developed rice strains best suited for the terroir. Yamagata is the first to implement Geographic Indication (GI). Sawane is currently in review process. The Gokujo has already been approved. Sawane means harmoniously brewed in Yamagata.Using locally developed Dewanosato rice and Yamagata Ginjo yeast, Sawane opens with a bright and fruity aroma of fresh pear and finishes with a crisp but fruity finish. This sake’s namesake is Benten, the beautiful goddess of wisdom, music and good fortune. May she bring you the best of luck.

The Côte de Lechet is the principal holding of the Defaix family; they own 8ha (18 acres) of this Premier Cru. Near Vaillons, on the Left Bank of the Serein, this area of premiers crus is known for its high-toned, airy style, with abundant chalky minerality. 2022 is an excellent, balanced vintage, ripe but dry and mineral. This style could be the (excellent!) future for Chablis in the climate change era.

Sale!Cantine Bertani has been making wines in the Veneto region of Italy for more than 150 years. They have consistently strived to combine tradition and research to create wines of uncompromising quality with a distinct identity. Grapes are dried in traditional drying rooms, where they rest on racks for 99 days before the winemaking process begins. An intense red color with hints of garnet, this wine offers succulent red plums and morello cherries on the nose, as well as notes of tea leaves, licorice, and spices. The Bertani Amarone has been described as “larger than life.” This power is balanced by elegance on the dry palate, which showcases red berries sweetened by soft notes of spices. Eight years of ageing in Slavonian oak barrels in conjunction with one further year of ageing in bottle have further contributed to this wine’s complexity. This wine can be easily matched with red meat, game and mature cheese, but is also perfect as a vino da meditazione – a meditation wine.
