The Tomita Brewery is one of Japan’s oldest breweries; it was founded in the 1540s and is now managed by the 15th generation president. Tomita is also one of the smallest sake producers, making just over 6,000 cases a year.

Herbal & nutty on the nose and dry, green apple with a crisp finish on palate. it is best served chilled and paired with fish, sashimi and cocked vegetables.

Borgogno No Name 2020

Borgogno No Name is made from estate fruit from three of Barolo’s top Crus, and declassified in protest by one of the greatest Barolo producers of all time. “I have chosen one of my best wine and I called it No Name as a quiet protest against the bureaucracy that afflicts Italian agriculture and the wine world.” Made with 100% Nebbiolo, the wine was aged in oak barrels for at least three years and in bottle for at least two years. Intense garnet red color with orange rim. Ethereal, persistent, perfumed. Dry, with velvety tannins, ageworthy.

About Borgogno

Founded in 1761, Borgogno is the oldest continuously operating winery in Barolo. Cesare Borgogno expanded the winery’s production in the 1920s and commercial success followed as he became one of the first winemakers from Piedmont to ship wines abroad. Today, the estate includes 39 hectares with 31 planted to vine. These include five hectares of Timorasso and rows in some of Barolo’s most storied vineyards including Liste, Cannubi, Cannubi San Lorenzo, Fossati, and San Pietro delle Viole. Made with long maceration times and minimal intervention, the wines are renowned for their traditional style and long-term aging potential, a favorite of Italian wine professionals and collectors.

Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.
Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.
With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt.

Marques de Murrieta Castillo Ygay Gran Reserva Especial 2011

Castillo Ygay is always made from grapes sourced from La Plana, a 40-hectare (98-acre) vineyard, planted in 1950 and located at 485 meters altitude, the highest area of Ygay Estate; the 300-hectare estate surrounding the winery in Rioja Alta.
The tempranillo is aged for 28 months in 225-litre American oak barrels and the mazuelo is aged for 28 months in 225-litre French oak barrels.
Marques de Murrieta Castillo Ygay Gran Reserva Especial 2011 has aromas of ripe cherry, blueberry and cassis with refined hints of garrigue, Mediterranean herbs, black pepper, clove and mocha. Balance defines this wine vintage after vintage; lively on the palate yet enveloping and harmonious. With silky tannins and a long, elegant finish.
