The Jansz Premium NV Cuvee is based upon Jansz wines of several vintages. Specially selected and crafted individual batches from cool climate locations in Tasmania form this wine. Every site used to source grapes is specifically designated to growing fruit for sparkling wine. Honeysuckle and citrus scents are immediately apparent with slight aromas of nougat, roasted nuts and a sniff of strawberry from the Pinot Noir. Delicate fruits and creaminess wash through the mouth leaving a lingering finish of citrus and nougat.

The epitome of purity, this sake is more subtle and nuanced than most highly aromatic Junmai Daiginjos. It is based on the ideals of Zen Buddhism and "wabi-sabi," the belief that beauty within the arts should be as understated and pure as a simple strand of pearls. One of two sakes brewed in exactly the same way with the same ingredients, except this one is a Junmai Daignjo and Tears of Dawn has added distilled alcohol to open up aromatics. Aromas of white flower and Asian pear followed by clean flavors of honeydew, lemon, and a hint of licorice. Finishes elegantly with rich minerality and rice texture. This is a great sipping sake but also a wonderful companion to scallops, pork, and light meats.

Nishide Shuzo 100 Year Junmai Daiginjo Sake is a premium Japanese sake produced by Nishide Shuzo, that has only 3 employees, just as it has had for the past 5 generations, located in the Ishikawa prefecture in Japan. This sake is made using traditional methods, with a focus on using the highest quality ingredients and a dedication to craftsmanship. The sake is made from locally grown Gohyakumangoku rice, which is polished to 50% of its original size to remove impurities and enhance the flavor profile. Also the brewery use a yeast known as Kuratsuki Kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes. Cave Caloz is a family run winery that was established three generations ago and whose wine production guarantees the health and nourishment of the land, whilst benevolently using natural and human resources. The grapes, which are harvested by hand and vinified in our cellar, produce vintages that bring joy and meaning to our profession. The winery was founded by Fernand, who built both the cellar and the family house in 1960. Color: Straw Aromas: honey and white flower. Palate:  Spiced lemon flavors with snappy acidity. Nicely textured and round with a tingle to finish.
