    Dassai 45 Junmai Daiginjo is a premium Japanese sake that is highly regarded for its exceptional quality and complex flavor profile. It is produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan, using only the finest rice and water. Junmai refers to sake that is made purely from rice, water, yeast, and koji. Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai 45 Junmai Daiginjo is made using Yamada Nishiki rice, which is considered one of the best sake rice varieties in Japan. It has a polished ratio of 45%. This allows for a rich and complex flavor profile with a smooth, clean finish. The sake is characterized by a delicate aroma and a balanced sweetness, with notes of pear, honeydew, and white peach. Overall, Dassai 45 Junmai Daiginjo is a highly sought-after sake that is often served as a special occasion drink or as a gift to those who appreciate fine sake. In 1991, with the name Franciacorta Brut N.V., it takes on an increasingly recognizable style, more expressive of its terroir. In 2005, after more than 30 years of experimentation and dedication, it matures into Cuvée Prestige and acquires its own well-defined identity. Following a constant reduction in the liqueur added at disgorging, in order to exalt the characteristics of the grapes, with the 2017 harvest it adds Edizione to its name, allowing the gustatory memory to precisely identify the various nuances of each interpretation.

    The Oze x Rose Junmai Daiginjo is a premium Japanese sake produced in Gunma prefecture by Ryujin Shuzo Ryujin Shuzo's underground water is very soft and feminine, lending to their brewers the power to draw out the hidden flavors in their rice. Their aim is to create flavorful, mellow, high quality sake that warms the heart upon drinking. They like to combine their traditional skills and methods with the brewer's heart. To this end, they work hard to improve their skills every day to work towards the next challenge, and brew excellent beer in the off season. A lovely rose-colored sake that exists within a sphere of balance between sweet and tart, and has a flavor that resembles wild strawberries. Brewed with the exceedingly difficult-to-use red yeast, it has been said that if a Junmai Daiginjo is the most difficult grade of sake to brew, this Rose Junmai Daiginjo was 10 times as difficult, so many brewers are unable to work with it.     Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.

    Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.

    Izumo Fuji Yamadanishiki 50 Junmai Ginjo

    Founded in 1939, the Fuji brewery is managed by the 3rd generation Imaoka family in the town of Izumo. The town is famous for its shrine, Izumo Taisha, built in the 8th century. This shrine is regarded as the oldest and most important shrine in all of Japan. In its name, Izumo Fuji sake pays tribute to both this shrine and to Mt. Fuji, the most loved and revered symbol of Japan. The Imaoka family brews using old school and traditional methods without modern machines. They do everything by hand: steaming using an old-fashioned Japanese steamer, koji making, and pressing by fune press, or wooden vat, a very gentle method.
    It shows pineapple, candied sugar, subtle pear on the nose. On the palate it is juicy, soft and melting.

    The Tomita Brewery is one of Japan’s oldest breweries; it was founded in the 1540s and is now managed by the 15th generation president. Tomita is also one of the smallest sake producers, making just over 6,000 cases a year.
    Herbal & nutty on the nose and dry, green apple with a crisp finish on palate. it is best served chilled and paired with fish, sashimi and cocked vegetables.
