This cuvée is made from grapes located in the Macôn region in southern Burgundy. The terroir "les Charmes" is a terroir located in the east of the appellation.

This cuvée comes from a blend between some wine from 60 % Maconnais in the area of Lugny and 40% Montagny in the cote Chalonnaise. The wines from Lugny with the limestone give some freshness and some minerality of structure; we can find some aromas of citrus, grapefruit and white roses. The wines from Montagny give some note of ripe pear and peach. In the mouth, the wine is always fresh, young at heart, frisky, alluring, and rich in spicy back-flavours.

Their aim is to create flavorful, mellow, high quality sake that warms the heart upon drinking. They like to combine their traditional skills and methods with the brewer's heart. To this end, they work hard to improve their skills every day to work towards the next challenge, and brew excellent beer in the off season. A lovely rose-colored sake that exists within a sphere of balance between sweet and tart, and has a flavor that resembles wild strawberries. Brewed with the exceedingly difficult-to-use red yeast, it has been said that if a Junmai Daiginjo is the most difficult grade of sake to brew, this Rose Junmai Daiginjo was 10 times as difficult, so many brewers are unable to work with it. L’ Hospitalet de Gazin Pomerol 2019

Château Gazin is located on the north-eastern part of the Pomerol plateau in Bordeaux, between Châteaux Petrus and Lafleur-Gazin, on a terroir of gravel with a subsoil of blue and green clay with iron oxides. L’Hospitalet de Gazin, the second wine of Château Gazin, has been produced since 1986 from the fruit of younger vines. It is an elegant, supple, charming wine, that can be enjoyed after just a few years in bottle. Expect lovely aromas of black plum, ripe cassis and cedar, and the palate was very smooth with a savory finish.

Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.
Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.
With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt.
