Dassai 23 Junmai Daiginjo is a premium Japanese sake that is highly regarded for its exceptional quality and complex flavor profile. It is produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan, using only the finest rice and water. Junmai refers to sake that is made purely from rice, water, yeast, and koji (a type of fungus that converts starch to sugar). Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai 23 Junmai Daiginjo is made using Yamada Nishiki rice, which is considered one of the best sake rice varieties in Japan. Founded in 1939, the Fuji brewery is managed by the 3rd generation Imaoka family in the town of Izumo. The town is famous for its shrine, Izumo Taisha, built in the 8th century. This shrine is regarded as the oldest and most important shrine in all of Japan. In its name, Izumo Fuji sake pays tribute to both this shrine and to Mt. Fuji, the most loved and revered symbol of Japan. The Imaoka family brews using old school and traditional methods without modern machines. They do everything by hand: steaming using an old-fashioned Japanese steamer, koji making, and pressing by fune press, or wooden vat, a very gentle method.It shows pineapple, candied sugar, subtle pear on the nose. On the palate it is juicy, soft and melting. -

The Pinot Noir grapes are fermented in vats for up to one month, and then matured for 15 to 18 months in oak barrels before bottling. Domaine Anne Gros is well-known for producing exceptional Pinot Noir from the appellation of Vosne-Romanée. The owner Anne Gros is widely recognized as one of the leading winemakers in Burgundy. She took over the estate from her father, Francois Gros, in the late 1980s. Anne Gros is known for her meticulous approach to winemaking, with hand-picking the grapes, fermenting with natural yeasts, and using French oak barrels. She also practices minimal intervention in the vineyards, using sustainable and organic farming practices. This Bourgogne Chardonnay 2020 is special selection of fruit from vines planted close to Anne’s vineyards, just outside of Vosne. The wine is aged for one year in French oak casks (500L), with 25% new oak. Expect fresh acidity, medium body, with notes of citrus blossom and fresh pineapple, and a wonderful lacy texture. -

They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. The aroma is modest and vaguely citrusy, and the flavor has a hint of sourness with solid umami, yet the finish is clean and pleasant. Enjoyed best with both Asian and western seafood or fried/fatty dishes. -
