Fermentation in tanks. When the natural sugars in the wine have a value of 23 grams per liter, it is bottled and the final sparkling wine is left with 9 grams of sugar. The wine continue to ferment inside the bottle up to the indicated pressure. The sugar in sparkling wine and it ́s pressure are obtained naturally. As part of the ripasso technique, the wine is 'passed over' dried grapes to contribute depth and character. Ripasso styles, such as this one, can therefore offer the best of both worlds: notes of ripe red cherry and underbrush (that you often find with Valpolicella), alongside those of spice and chocolate (often found with Amarone). This wine is full-bodied with velvety tannins, aged in barrels and cement vats before spending three further months in bottle prior to release.
