  • Château Cantegril Sauternes 2018 is a dessert wine produced in the Sauternes appellation of Bordeaux, France. Sauternes wines, including Château Cantegril, are renowned for their unique production process involving the development of noble rot. This fungus, known as Botrytis cinerea, affects the grapes and concentrates their sugars, resulting in a wine with rich sweetness and complex flavors. Château Cantegril Sauternes 2018 is primarily made from Sémillon grapes, which contribute to the wine's lush and opulent character. It also includes smaller proportions of Sauvignon Blanc and Muscadelle, adding to the wine's aromatic profile and overall balance. Château Cantegril Sauternes 2018 offers an enticing bouquet of ripe stone fruits such as apricot and peach, along with notes of honey, citrus zest, and a touch of tropical fruits. On the palate, it displays a velvety texture and a harmonious balance between the wine's sweetness and lively acidity. The flavors unfold layers of dried fruits, candied orange peel, honeyed almonds, and a hint of vanilla. The wine finishes with a lingering, honeyed sweetness.   • González Byass was created in 1835 by Manuel Maria González and remains in family hands today, now in the fifth and sixth generation.  Founded in Jerez de la Frontera, Andalusia, in the heart of Sherry country, it is dedicated to the production of high quality sherries. The Sherry triangle, made up of Jerez de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda, has a unique microclimate influenced by the surrounding Atlantic Ocean and Guadalquivir and Guadalete rivers. Production is dominated by the Palomino variety, and vines are planted in the white Albariza soil, with high chalk content which is excellent for retaining moisture.  These soil conditions, combined with over 3,000 hours of annual sunshine, fresh, humid breezes from the west (poniente) and warm, dry breezes from the east (levante) have formed the perfect marriage with the Palomino variety to produce an array of sherry styles.
    All sherries are aged following the traditional Solera system where the wines are blended in 600 litre American oak casks. Many styles are produced with distinctive characters depending on whether they have been aged under the influence of the flor (a layer of natural yeast) or as an oloroso (in contact with oxygen).     All batches of Bush Vine Grenache are crushed as separate parcels to either static pumpover fermenters or open top fermenters. The majority of batches are fully destemmed, however for some the stems are left on to contribute another flavour dimension. The wild yeasts present on the grape skins are allowed to initiate fermentation. Particular batches are selected to remain on skins post-fermentation. This extended maturation helps to contribute an even greater complexity and individuality to the wine. After draining and pressing off skins, all batches are racked into older American, French and Hungarian hogsheads for six months maturation. The fragrance is saturated with brooding plum red fruits, dark cherries and perfumed berries. This is a defined wine showing the richness and concentration of the vintage. The palate is richly textured, fleshy, round and supple, with a red juiciness that merges into velvety tannins.
