    Shichi Hon Yari Shizuku Junmai Daiginjo Silent Samurai is a premium Japanese sake produced by the Tomita Brewery, located in Shiga Prefecture, Japan. This sake is made using traditional methods and high-quality ingredients, including Tamazakae rice that is highly polished, and slowly fermented at a lower temperature. The "Shizuku" brewing method is used to produce this sake, which involves using gravity to extract the sake from the mash without the use of a press. This results in a more delicate and refined sake with a smoother texture. Silent Samurai has a clear, pale gold color with a subtle aroma of rice, fruit, and a hint of floral notes. On the palate, it has a delicate and smooth texture with a medium body and a balanced acidity. The taste is complex, with flavors of apple, pear, and a hint of umami. The finish is long and clean, with a subtle sweetness and a pleasant dryness.   • The vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. Our Chablis are characterized by their freshness, power and tenacity. Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit).
     
  • The fruit is sourced from the following crus: Bricco Ambrogio (Roddi village), Roere di Santa Maria (La Morra), Bussia (Monforte d’Alba). The emphasis on Roddi and La Morra help explain the airy style of the wine, a lighter style than wines coming from the villages of Barolo or Serralunga, for example. Gian Luca explains about the 2018 vintage, a relatively cool year: a vintage that gave us wines that are really charming and approachable when young; the wines are already expressive, fruity, aromatic and tannins smooth and soft.
