Izumo Fuji Junmai Ancient Shrine is made with Yamada Nishiki rice grown in Shimane prefecture. The brewery is located in the town of Izumo, home to one of Japan’s oldest and most revered Shinto shrines. Izumo Fuji Junmai Ancient Shrine has violet aroma, plum on palate; soft, relaxed, and expansive in texture. An “umami type” of sake with ricey dryness. Serve chilled, room temperature or warmed. Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15th generation of the family, Yasunobu Tomita, who is also the brewmaster. The Tomita’s named their sake Shichi Hon Yari, or “Seven Spearsmen,” after the leaders of the historic Battle of Shizugatake which was fought just outside their town of Kinomoto. Shichi Hon Yari Junmai is the classic representation of the brewery’s style with its traditional and modern dimensions. Earthy and rich aromatics and flavors meet elegance and softness in the finish. The bright acidity makes this a fun sake to pair with dishes outside of traditional Japanese cuisine, including Duck a l’orange and Yukhoe, Korean Steak Tartare. -

Kumeu River Village Chardonnay 2022 is made from grapes grown in Kumeu and Hawkes Bay. It was fermented in a mix of old French oak barriques (33%) and stainless steel tanks (67%). The barrel fermentation adds some richness but little oak flavor, while the tank fermentation allows the vibrant fruit to shine through.The wine has lively lime and lemon aromas, a flinty, mineral edge, and hints of fig and white peach. The 2022 Vintage was another good year, with Hawkes Bay fruit making up 55% of the final blend. The mid-palate is weighty with peachy ripeness and crisp acidity that gives the wine a refreshing, cleansing quality. This dry, mineral-driven Rosé is produced from Grolleau (70%) and Gamay (30%). The vines are planted to clay, sandstone and schist soils. Palazzo della Torre is one of the wines that has made Allegrini famous internationally, as it was the precursor of the double fermentation method: most of the grapes are vinified at harvest, while the remaining part is left to partially dry (appassimento). In January the wine is blended with the raisinated grapes, and a second fermentation begins. It then ages in second use French oak barriques for 15 months. A blend of Corvina Veronese, Corvinone, Rondinella and Sangiovese, this is an elegant, harmonious wine with considerable structure. Expect notes of vanilla, black pepper and cloves, with gentle nuances of raisined grapes. The palate is velvety, with soft tannins and a long and persistent finish. -

The modern day city was originally three villages (Aubune, Beaumes, and Saint Véran). The “T” is a tau which is also an old form of the cross. The three taus, or crosses, are for the protectors of the three villages, Sainte Anne, Saint Roch, and Saint Sébastian. -
Ramos Pinto Duas Quintas 2021 is a red wine produced by the Ramos Pinto winery in Portugal's Douro region. It is made from a blend of two different grape varieties: Touriga Nacional and Touriga Franca. In the glass, the wine has a deep ruby color with violet hues. he only Sakagura/Sake Brewery in Kochi City (named after alias of Yamauchi Yōdō, who was a Japanese Daimyo of the Shikoku region in the Edo period). They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. A reserved aroma, gentle rice notes, perfect acidity and a fine finish combine to create the unique flavor profile of Suigei Tokubetsu Junmai. -

The Vivanco winery and its incredible museum is located in Briones, La Rioja. Founded by Pedro Vivanco, a pioneer among Spanish winemakers, the estate is now managed by his sons, Rafael and Santiago. Rafael is the winemaker and is focused on producing wines exclusively from native grapes using traditional techniques. This Vivanco Crianza is made with 95% Tempranillo, 2% Maturana Tinta, and 3% Graciano, and aged in both French and American oak barrels for 16 months. Fresh and floral, expect red berry aromas with spicy notes on the nose, a well-balanced palate with juicy acidity and medium chalky tannins. -
