    The Hojo Biden Yamahai Junmai is a bold sake designed to match the rich flavors of the local Fukuoka cuisine.  Brewed a touch sweeter than a common sake, the off dry flavor is balanced by a stronger alcohol presence of 16-17% and higher than average acid from the yamahai brewing process. Aged for 2 years in bottle before release to allow the flavors to mellow and harmonize. It has notes of honey, almonds, and vanilla lead to a balanced palate.     Toko Sun Rise Junmai Ginjo is made from Dewasansan rice, a descendant of the iconic Omachi heirloom strain. This rice is exclusively grown in Yamagata prefecture and helped to pave the way for Yamagata to receive the first geographical indication (GI), or appellation, in all of Japan. Toko Sun Rise Junmai Ginjo has some grassy, floral aromas with green apple and melon notes. The finish is soft and smooth. It is an excellent pairing with teriyaki salmon, sautéed snow pea shoots or maple glazed ham.

    This very special bottle was originally conceived by the 5th generation current brewery owner Kosuke Kuji and the late legend brewmaster Hajime Yamaguchi. Nanbu Bijin 10 Years Aged Daiginjo is a well-structured Daiginjo with a silky mouthfeel and elegantly clean finish. The subtle notes of fuji apple, white peach and musk melon dance around the nose and play a lively game of contrast against the delicate grain and spice notes that are hidden on first impression. This sake is then produced using a time consuming shizuku method where drops of sake are collected through gravity versus being pressed, it is then aged in 1.8L bottles for 10 years before final bottling. Nanbu Bijin brewery makes limited releases of this sake only available to select restaurants in the U.S. and very special sake stores.

    This brew boasts a juicy taste reminiscent of pear and white peaches. Notes of sugarcane and roasted almond can be detected in the middle, followed by a bitterness akin to that of cacao and orange peel on the finish.
