    Yamagata prefecture has established itself as one of the top Ginjo and Daiginjo producing region of Japan and backs up the claim with locally developed rice strains best suited for the terroir. Yamagata is the first to implement Geographic Indication (GI). Sawane is currently in review process. The Gokujo has already been approved. Sawane means harmoniously brewed in Yamagata.

    Mizumoto is a traditional brewing method dating back 500 years. Both the acidity and yeast are open fermentation. Possibly the highest acid sake you’ve ever had.
