The estate’s second wine since 2011, it is made by fermentation and gentle, gravity-fed extraction in small inverted truncated-cone tanks. Le Lion de la Fleur de Bouard 2020 expresses a fruity intensity. Ageing in tank with 15% new French barrels which brings out fine oaky notes.

Tokara Cabernet Sauvignon 2021 has a bright claret color. On the nose the wine has aromas of dark plum, subtle cassis and blackberry followed by spices and the slightest hint of vanilla. The palate has notes of dark fruit interwoven in spice and light toast from the barrels. Enjoy with lightly smoked Springbok carpaccio, grilled veal chops, braised meat dishes or a juicy steak.

A fragrant unspooling of red berries, just plucked off a wintery branch, cool and incandescent. The aromas deepen to the darker tones of cassis, brambleberries and black cherries. The vivid fruit is overlaid with a hint of balsam, sketched in with woody spice, fresh cinnamon, touches of vanilla smoke and classic cigar box. The line of cassis continues onto the palate with ripe plums and succulent red cherries, the juicy fruit enlivened further by a refreshing, natural acidity. Fine-grained, powdery tannins layer and dissolve, carrying all that fruit towards the appetisingly clean, and dry finish.

Cantine Bertani has been making wines in the Veneto region of Italy for more than 150 years. They have consistently strived to combine tradition and research to create wines of uncompromising quality with a distinct identity. As part of the ripasso technique, the wine is 'passed over' dried grapes to contribute depth and character. Ripasso styles, such as this one, can therefore offer the best of both worlds: notes of ripe red cherry and underbrush (that you often find with Valpolicella), alongside those of spice and chocolate (often found with Amarone). This wine is full-bodied with velvety tannins, aged in barrels and cement vats before spending three further months in bottle prior to release. This rich Ripasso would complement a variety of Italian dishes, from grilled and roasted meats to risotto with porcini mushrooms.
