The vivid fruit is overlaid with a hint of balsam, sketched in with woody spice, fresh cinnamon, touches of vanilla smoke and classic cigar box. The line of cassis continues onto the palate with ripe plums and succulent red cherries, the juicy fruit enlivened further by a refreshing, natural acidity. Fine-grained, powdery tannins layer and dissolve, carrying all that fruit towards the appetisingly clean, and dry finish.

Toko Sun Rise Junmai Ginjo
Toko Sun Rise Junmai Ginjo is made from Dewasansan rice, a descendant of the iconic Omachi heirloom strain. This rice is exclusively grown in Yamagata prefecture and helped to pave the way for Yamagata to receive the first geographical indication (GI), or appellation, in all of Japan. Toko Sun Rise Junmai Ginjo has some grassy, floral aromas with green apple and melon notes. The finish is soft and smooth. It is an excellent pairing with teriyaki salmon, sautéed snow pea shoots or maple glazed ham.

The Graham’s 2017 can be enjoyed anytime and pairs wonderfully with dark chocolate desserts as well as semi-cured and cured cheeses like Cheddar and Manchego. On the nose it has a lovely honeysuckle fragrance as well as hints of mint, along with bright, attractive tropical fruit notes in the background. On the palate it has notes of ripe black fruit combining with hints of kirsch. The fine-grained tannins give the wine balance and structure, whilst good acidity underscores the wine’s freshness.
