González Byass was created in 1835 by Manuel Maria González and remains in family hands today, now in the fifth and sixth generation. Founded in Jerez de la Frontera, Andalusia, in the heart of Sherry country, it is dedicated to the production of high quality sherries. The Sherry triangle, made up of Jerez de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda, has a unique microclimate influenced by the surrounding Atlantic Ocean and Guadalquivir and Guadalete rivers. Production is dominated by the Palomino variety, and vines are planted in the white Albariza soil, with high chalk content which is excellent for retaining moisture. These soil conditions, combined with over 3,000 hours of annual sunshine, fresh, humid breezes from the west (poniente) and warm, dry breezes from the east (levante) have formed the perfect marriage with the Palomino variety to produce an array of sherry styles.All sherries are aged following the traditional Solera system where the wines are blended in 600 litre American oak casks. Many styles are produced with distinctive characters depending on whether they have been aged under the influence of the flor (a layer of natural yeast) or as an oloroso (in contact with oxygen). Aged following a biological ageing, under a veil of yeast called “flor” in the cool, humid, salty air of Sanlúcar de Barrameda, a fishing town on the estuary of the Guadalquivir river. Bright yellow colour with golden reflections. This Manzanilla is laced with sea breeze scents and pleasant chamomile and flor aromas. Bone dry and light, fresh and crisp, with a hint of sea salt on the palate. Delicate and refreshingly acid with a lingering aftertaste. Papirusa means “elegant and beautiful”. It was the name of the doll that Emilio Lustau gave the daughter of Joaquín Burgos, first manager of Bodegas Lustau in the ’40s.Bone dry and light, fresh and crisp, with a hint of sea salt on the palate.

The Muga Rosado 2022 vintage has a pale pink colour. It has a very intense, complex nose, with an initial sensation of peaches, apricots and white blossom. On the palate, it is very well balanced with the acidity integrated with the sensation of volume in the mouth and a very long finish which brings back the reminders of stone fruit and some citrus nuances. -

he only Sakagura/Sake Brewery in Kochi City (named after alias of Yamauchi Yōdō, who was a Japanese Daimyo of the Shikoku region in the Edo period). They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. A reserved aroma, gentle rice notes, perfect acidity and a fine finish combine to create the unique flavor profile of Suigei Tokubetsu Junmai. -

The modern day city was originally three villages (Aubune, Beaumes, and Saint Véran). The “T” is a tau which is also an old form of the cross. The three taus, or crosses, are for the protectors of the three villages, Sainte Anne, Saint Roch, and Saint Sébastian. -

Palazzo della Torre is one of the wines that has made Allegrini famous internationally, as it was the precursor of the double fermentation method: most of the grapes are vinified at harvest, while the remaining part is left to partially dry (appassimento). In January the wine is blended with the raisinated grapes, and a second fermentation begins. It then ages in second use French oak barriques for 15 months. A blend of Corvina Veronese, Corvinone, Rondinella and Sangiovese, this is an elegant, harmonious wine with considerable structure. Expect notes of vanilla, black pepper and cloves, with gentle nuances of raisined grapes. The palate is velvety, with soft tannins and a long and persistent finish. -
