A world class Blend in the Bordeaux tradition. The Merlot offers up black fruit aromas such as black cherry and blackberry, all with wonderful freshness on the palate. The Cabernet Sauvignon, in particular from old pre-phylloxera vines, offers up aromas of red fruit (raspberry) and black fruit (blackcurrant, blueberry) with some ripe bell pepper and black olive notes. As it matures it develops pepper, crème de cassis, leather and charred notes (smoke, toast and chocolate). The Carmenère, brightly coloured with hints of purple, is rich with rounded tannins. There are delicate cherry aromas on the nose, subtly balanced out by spicy touches of black pepper. Freshness on the palate ensures a beautiful finish of black fruit, smoke, cocoa, leather and tobacco notes.

Château Gazin is located on the north-eastern part of the Pomerol plateau in Bordeaux, between Châteaux Petrus and Lafleur-Gazin, on a terroir of gravel with a subsoil of blue and green clay with iron oxides. L’Hospitalet de Gazin, the second wine of Château Gazin, has been produced since 1986 from the fruit of younger vines. It is an elegant, supple, charming wine, that can be enjoyed after just a few years in bottle. Expect lovely aromas of black plum, ripe cassis and cedar, and the palate was very smooth with a savory finish.

Salomon Undhof Ried Wachtberg Gruner Veltliner 2020
Salomon Undhof is an important, historic producer in the Kremstal region of Austria, producing world class Grüner Veltliner and Riesling wines from the slopes above the Danube river. Founded in 1792, the Salomon family is now in its eighth and ninth generation working these vineyards, and were among the first Austrian producers to export to the USA in the 1930s. The Salomon-Undhof Gruner Veltliner “Wachtberg” presents a vibrant and refreshing profile, characterized by its crisp acidity and minerality. On the nose, it reveals aromas of green apple, white pepper, and subtle hints of citrus. The palate is greeted with flavors of ripe pear, lemon zest, and a touch of honey, leading to a clean, lingering finish. This wine is a classic example of Gruner Veltliner's elegance and versatility. It's a perfect match for light salads and Asian dishes, especially those with a slight spice, as its refreshing character balances the heat.
Kirin-Zan Classic Sake Magnum
Dry, clean, light-bodied and well-refined. This is a representative of the TanreiKarakuchi sake made in Niigata, the heartland of Japanese premium sake production. Kirinzan Shuzo is located near Mt. Kirin (= Kirin-zan) in Tsugawa, Niigata. Kirin is a mythical creature much like a flying unicorn, is believed to bring about happiness and luck. Food pairing:
- Matches well with most of Japanese dishes, especially when served room temp or lukewarm, including raw/lightly grilled fish and shrimps, tofu, simmered vegetable, and sunomono.
- Bacon-wrapped Scallops - “The Classic” is paired with the soft, rich, nuttiness of the seared Sea Scallop because of the ricey, nutty aromas of the sake. The crispy, salty outer rim of seared bacon needs the strong more intensely forward flavors that the sake provides.
