Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.

Izumo Fuji Yamadanishiki 50 Junmai Ginjo

Founded in 1939, the Fuji brewery is managed by the 3rd generation Imaoka family in the town of Izumo. The town is famous for its shrine, Izumo Taisha, built in the 8th century. This shrine is regarded as the oldest and most important shrine in all of Japan. In its name, Izumo Fuji sake pays tribute to both this shrine and to Mt. Fuji, the most loved and revered symbol of Japan. The Imaoka family brews using old school and traditional methods without modern machines. They do everything by hand: steaming using an old-fashioned Japanese steamer, koji making, and pressing by fune press, or wooden vat, a very gentle method.

It shows pineapple, candied sugar, subtle pear on the nose. On the palate it is juicy, soft and melting.

Shichi Hon Yari Ginfubuki Junmai Ginjo

The Tomita Brewery is one of Japan’s oldest breweries; it was founded in the 1540s and is now managed by the 15th generation president. Tomita is also one of the smallest sake producers, making just over 6,000 cases a year.

Herbal & nutty on the nose and dry, green apple with a crisp finish on palate. it is best served chilled and paired with fish, sashimi and cocked vegetables.

Yuki No Bosha Junmai Daiginjo

Yuki No Bosha Junmai Daiginjo "Cabin in the Snow" Saiya Brewery doesn't allow high demand speed their production. The sake they brew follows a strict discipline to fine quality. The brewers do all they can to insure a healthy and clean environment and level of strong, consistent effort in brewing. The composition of their sake doesn’t take on a strong aroma (known as uwadatsuka), instead it has a strong aftertaste, or fukumi. This achievement takes studied time, brewing at low temperatures without exposure to air. The result allows for the aromas of the yeast to blend beautifully into their sake.

Earthy, rustic, elegant, fruity, crisp, peach, roasted sage, long & layered finish. The brewmaster (toji) for Saiya brewery has been recognized as a cherished craftsman by the Emperor of Japan.

Chateau Duhart-Milon Pauillac 2018

Beautiful dark red colour with glints of black. The nose is still closed but presents all the characteristics of superb aromatic potential. Depth, complexity and oaky notes are already perfectly integrated. On the palate the attack is soft and silky. Then, gradually, with the same softness, the wine invades the mouth, slowly revealing its fresh character, typical of Duhart-Milon’s late-ripening terroir. A very dense wine with tight, delicate tannins creating excellent length on the palate. All the necessary qualities for a very promising future.

Robert Parker - 98 points: :2005 was a very dry, warm and sunny vintage, causing vine stress in some areas of Bordeaux. Harvested from September 26 to October 6, the tannin/IPT levels were very high this year. The 2005 Latour is blended of 87% Cabernet Sauvignon, with the rest Merlot and Petit Verdot. It is the biggest surprise of this tasting—until now, the wine was relatively closed and broody, but today the wine is just starting to reveal its personality—and what a stunner! Medium to deep garnet-purple colored, it opens with provocative floral scents of roses and violets over a core of fresh blackcurrants, chocolate-covered cherries and black raspberries with hints of fertile loam, unsmoked cigars and black tea. Medium to full-bodied, firm, grainy and packed with muscular fruit, it has an epically long, savory finish sparked by floral notes. 12,000 cases were made."
