About Perrier-Jouët Blanc de Blancs: After creating vintage Perrier-Jouët Belle Epoque Blanc de Blancs, Cellar Master Hervé Deschamps naturally wished to complete the classic collection with a single-grape cuvée destined to become the enduring expression of the House’s specialist savoir-faire. Indeed, with Perrier-Jouët Blanc de Blancs, Maison PerrierJouët was perpetuating a tradition dating back to the early 20th century – the House introduced its first allChardonnay cuvées in the 1920s, long before such champagnes became known as “Blancs de Blancs”. To craft Perrier-Jouët Blanc de Blancs, Hervé Deschamps blends Chardonnay grapes selected from several of the region’s finest terroirs with a small proportion of reserve wines to ensure absolute consistency of style and quality. After three years’ ageing on the lees in the PerrierJouët cellars, the cuvée is ready to be released, overflowing with freshness and vitality. The initial nose shines by the pure vivacity of this vintage. As Rare Millésime 2008 gradually warms in the glass, a vast range of orange blossom, hyacinth and white flowers is released. This leads to the delicacy of vanilla blossoms, a touch of fresh coconut, aromas of just ripe Williams pear and fresh almond, enhanced by notes of tangerine and blackcurrant buds. The second nose reveals the saline minerality, abundant and refined, an iodine-smoky harmony and a touch of liquorice. On the palate the crispy, precise attack is followed by exuberant aromas of fresh pineapple, freshly cut and crisp, passion fruit, kiwi and coconut, nuanced with tangy citrus notes. These combine with plush spring-like flavours with unparalleled length. The finish, with remarkable saline and iodine notes, perpetuates the journey into an endless spring. -

Champagne Pommery Brut Grand Cru Royal Millesime 2008 has is crystalline, of a discreet gold with green reflections. The nose presents the patina of the Pommery vintages: elegance, minerality, freshness. First of all intense floral notes reach us: the peony floats around the hawthorn. Maturity is expressed by fruity notes of pear and fresh apricot. The great Pinot Noir present themselves with notes of crushed fresh strawberries. On the palate, the tasting is floating, with a great uprightness. A mineral structure fills the palate from the attack to the finish like a spine. Notes of acacia honey and Mirabelle underline the central element of the tasting. The finish is punctuated by a nice sweetness, marked by flavours of blood orange. -

This rosé is a faithful variation of classic Pommery Brut Royal created through the assembly of a red wine made with this mind, and different wines vinified in white, within a great proportion of chardonnay. A unique champagne in that it is composed of 100% Meunier, a grape that typically plays a supporting role in this region. Following a hand harvest the grapes go through alcoholic and malolactic fermentation in stainless steel vats. Afterwards, the new wine is blended with an impressive 50% reserve wine from the 2012-2014 vintages. Once bottled, it spends almost three years on the lees, gaining complexity. As an extra brut it receives only a small amount of dosage at 3g/L. The aromatics are all ripe orchard fruits, bright citrus, white pepper and minerality. The palate is full of fresh fruit, despite the low dosage, and thanks to the pure Meunier fruit. It is nearly full bodied and has flavors of pear, cherry, plum, brioche and apple skin. Pair with tuna steaks or salty, nutty cheeses. -
This Champagne comes from an exceptional year and an old vine over 75 years old, called "Les Terres de Noël". The fruits of this plot are the subject of very special attention. After close to 15 years of slow transformation in the cellars, Dom Pérignon expands its energy and rises to an apex of essential, radiant vitality, in its state of Plénitude. Elevated to new heights, it unfurls across every dimensions – wider, deeper, longer, more intense - and gifted further with an extended longevity. The 2004 fruit remains discreet, yet more clearly defined in this second life of the Vintage. Citrusy notes of pink grapefruit and blood oranges gently cede to figs. The additional time on the lees elevates the minerality of the vintage with the sublime maturity that is Dom Pérignon’s signature. Cocoa, mocha, roasted nuts, brioche and honey. The wine balances on the edge with immediacy and surprise, evolving between tension and weightlessness. It has an extreme, tactile precision, deep and sculptural.
