Collaborating with Pharrell Williams and Nigo starting in 2020, they're revolutionizing the craft sake industry. Ohmine has perfected the delicate balance of acidity and fruitiness, overcoming the challenges of bacterial interference in sake production. Their innovative approach combines effective temperature control and ideal alcohol content.
This brew boasts a juicy taste reminiscent of pear and white peaches. Notes of sugarcane and roasted almond can be detected in the middle, followed by a bitterness akin to that of cacao and orange peel on the finish. -
Vintage: Champagne Cristal 2015 relies on essence of its terroir, originating from vineyard plots under cultivation since 1845, following sustainable viticultural practices. This vintage reflects a distinctive identity deeply entrenched in the land, yet aspiring towards celestial heights. Winemaking: In the crafting of Cristal 2015, 25% of the wine undergoes oak aging, while the prevention of malolactic fermentation is deliberate to safeguard the fruit's luminous, fresh, and pure characteristics. The wine undergoes a six to seven-year sur lattes aging period, followed by an additional six to twelve months of post-disgorgement maturation. Tasting Notes: Cristal 2015 is a Champagne that engages the palate with its complexity and finesse. Its aromatic profile reveals nuances of yellow fruit, toasted almonds, and wheat from the Chardonnay, seamlessly integrated with the Pinot Noir's succulent red fruit notes. Domaine Antonin Guyon Corton Bressandes Grand Cru 2017 offers an exceptional range of Burgundies, mostly in the premier crus and the grand crus of the region. Corton is unique as it is the Côte de Beaune's only red grand cru appellation. This wine has a generous nose of juicy black fruit, cherries in particular. The palate is rich and full-bodied, offering vanilla, licorice, and an oak-spiciness from 18 months in French oak barrels, 50% of which were new. The concentration and broad tannin structure of this wine means it will continue to develop for the next 20 years. An excellent pairing for roasted meat, game, and most cheeses. -

An icon in the region, the Allegrini family has been a pivotal part of Valpolicella’s history since the 16th century. This long winemaking tradition, combined with grapes of exceptional quality (all Allegrini wines are produced from estate-grown fruit), has led to the brand’s success and sterling reputation. The controlled drying (appassimento) of the harvested grapes, which lasts for around three to four months, brings intense aromas of undergrowth and dark fruits, such as cherries and blackberry jam. An hour in the decanter would allow this wine to further unfurl and reveal its beautiful bouquet, which also includes notes of dried violets, dark chocolate, coffee and tobacco. Intense flavors, silky-smooth tannins, and a long, dry finish feature on the powerful palate, which is balanced by the elegance and finesse of a cooler vintage. Traditionally enjoyed with game, roasted and grilled meats, casseroles and well matured cheeses. This style of wine makes an excellent match for hearty dishes. Cantine Bertani has been making wines in the Veneto region of Italy for more than 150 years. They have consistently strived to combine tradition and research to create wines of uncompromising quality with a distinct identity. Grapes are dried in traditional drying rooms, where they rest on racks for 99 days before the winemaking process begins. An intense red color with hints of garnet, this wine offers succulent red plums and morello cherries on the nose, as well as notes of tea leaves, licorice, and spices. The Bertani Amarone has been described as “larger than life.” This power is balanced by elegance on the dry palate, which showcases red berries sweetened by soft notes of spices. Eight years of ageing in Slavonian oak barrels in conjunction with one further year of ageing in bottle have further contributed to this wine’s complexity. This very special bottle was originally conceived by the 5th generation current brewery owner Kosuke Kuji and the late legend brewmaster Hajime Yamaguchi. Nanbu Bijin 10 Years Aged Daiginjo is a well-structured Daiginjo with a silky mouthfeel and elegantly clean finish. The subtle notes of fuji apple, white peach and musk melon dance around the nose and play a lively game of contrast against the delicate grain and spice notes that are hidden on first impression. This sake is then produced using a time consuming shizuku method where drops of sake are collected through gravity versus being pressed, it is then aged in 1.8L bottles for 10 years before final bottling. Nanbu Bijin brewery makes limited releases of this sake only available to select restaurants in the U.S. and very special sake stores.

One single batch of Merlot, though of remarkably high quality, finally went into the blend, but it only represents 4% of the whole… It is the first time we have had so little. The Petit Verdot (4%) and the Cabernet Franc (2%) make up their usual proportions; they each bring added complexity that is difficult to define, but is most certainly a necessary contribution to the character of the wines of Château Margaux. The Cabernet Sauvignon therefore takes up almost all of the place: 90%! It brings to the 2006 an extraordinary aromatic finesse, a tannic richness that is second only to the 2005; and a particularly dense and tight-knit texture. The finish is very long, fresh and lively, a little bit firm, but already packed with flavour. 2006 is therefore a great Château Margaux vintage.
