Dassai 23 Junmai Daiginjo is a premium Japanese sake that is highly regarded for its exceptional quality and complex flavor profile. It is produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan, using only the finest rice and water. Junmai refers to sake that is made purely from rice, water, yeast, and koji (a type of fungus that converts starch to sugar). Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai 23 Junmai Daiginjo is made using Yamada Nishiki rice, which is considered one of the best sake rice varieties in Japan. It has a polished ratio of 23%, meaning that 77% of the outer layer of the rice grain has been removed. This allows for a pure and delicate flavor profile with a subtle sweetness and floral aroma. A world class Blend in the Bordeaux tradition. The Merlot offers up black fruit aromas such as black cherry and blackberry, all with wonderful freshness on the palate. The Cabernet Sauvignon, in particular from old pre-phylloxera vines, offers up aromas of red fruit (raspberry) and black fruit (blackcurrant, blueberry) with some ripe bell pepper and black olive notes. As it matures it develops pepper, crème de cassis, leather and charred notes (smoke, toast and chocolate). The Carmenère, brightly coloured with hints of purple, is rich with rounded tannins. There are delicate cherry aromas on the nose, subtly balanced out by spicy touches of black pepper. The quality of Château Margaux 2017 comes close to its illustrious predecessors without pretending to rival the generosity of 2015 or the elegance of 2016. Nonetheless, it has a rightful place in the estate’s lineage of great vintages: it is profound, complex, intense and long. In some respects, it even surpasses our hopes following September’s rainfall and demonstrates yet again to what extent great terroirs are capable of transmitting all their best qualities into the wine. The initial tastings in the winemaking process offered a moment of astonishment. The Merlot batches are remarkable: the aromas are fruity and soft, a roundness on the palate and rich volume made it possible to include them in a proportion of 8% for the first wine. The Cabernet Sauvignon is always the heart and the framework for Château Margaux, accounting for 89% of the blend. Upon tasting, the tannins were perfectly ripe, which reassured us that our decision to wait a few more days before harvesting was the right choice. The wines’ structure remains a rare combination of power and refinement. Cabernet Franc (2%) and Petit Verdot (1%) round out the blend for this wine. Château Margaux represents 37% of the harvest. -

One single batch of Merlot, though of remarkably high quality, finally went into the blend, but it only represents 4% of the whole… It is the first time we have had so little. The Petit Verdot (4%) and the Cabernet Franc (2%) make up their usual proportions; they each bring added complexity that is difficult to define, but is most certainly a necessary contribution to the character of the wines of Château Margaux. The Cabernet Sauvignon therefore takes up almost all of the place: 90%! It brings to the 2006 an extraordinary aromatic finesse, a tannic richness that is second only to the 2005; and a particularly dense and tight-knit texture. The finish is very long, fresh and lively, a little bit firm, but already packed with flavour. 2006 is therefore a great Château Margaux vintage. -

This very special bottle was originally conceived by the 5th generation current brewery owner Kosuke Kuji and the late legend brewmaster Hajime Yamaguchi. Nanbu Bijin 10 Years Aged Daiginjo is a well-structured Daiginjo with a silky mouthfeel and elegantly clean finish. The subtle notes of fuji apple, white peach and musk melon dance around the nose and play a lively game of contrast against the delicate grain and spice notes that are hidden on first impression. This sake is then produced using a time consuming shizuku method where drops of sake are collected through gravity versus being pressed, it is then aged in 1.8L bottles for 10 years before final bottling. Nanbu Bijin brewery makes limited releases of this sake only available to select restaurants in the U.S. and very special sake stores.
