Instead of the classic Niigata style of dry and short, they aim to create a “new” sake, centered on aroma, mellowness and deliciousness. A proprietary yeast lends herbs and acidity. While this is polished to 60% and using Yamagata rice, it’s more fascinating than your typical Ginjo. The nose is freshly expressed lemon skin oils. So fragrant! Then the herbs take over before it finally finishes with drying minerals. -

Yuki No Bosha Junmai Daiginjo "Cabin in the Snow" Saiya Brewery doesn't allow high demand speed their production. The sake they brew follows a strict discipline to fine quality. The brewers do all they can to insure a healthy and clean environment and level of strong, consistent effort in brewing. The composition of their sake doesn’t take on a strong aroma (known as uwadatsuka), instead it has a strong aftertaste, or fukumi. This achievement takes studied time, brewing at low temperatures without exposure to air. The result allows for the aromas of the yeast to blend beautifully into their sake.Earthy, rustic, elegant, fruity, crisp, peach, roasted sage, long & layered finish. The brewmaster (toji) for Saiya brewery has been recognized as a cherished craftsman by the Emperor of Japan. -

Domaine Anne Gros is well-known for producing exceptional Pinot Noir from the appellation of Vosne-Romanée. The owner Anne Gros is widely recognized as one of the leading winemakers in Burgundy. She took over the estate from her father, Francois Gros, in the late 1980s. Anne Gros is known for her meticulous approach to winemaking, with hand-picking the grapes, fermenting with natural yeasts, and using French oak barrels. She also practices minimal intervention in the vineyards, using sustainable and organic farming practices. This Bourgogne Chardonnay 2020 is special selection of fruit from vines planted close to Anne’s vineyards, just outside of Vosne. The wine is aged for one year in French oak casks (500L), with 25% new oak. Expect fresh acidity, medium body, with notes of citrus blossom and fresh pineapple, and a wonderful lacy texture. -

A beautifully dense and complex sake, the Toyo Bijin Ichiban Matoi Junmai Daiginjo contains notes of fresh tropical fruit like melon, papaya and strawberry. Gorgeous aromatics, the sake itself is soft with a pleasant off dry flavor, but balanced by a light acidity. A bracing, lively and racy example of the Daiginjo category. Champagne Pommery Brut Grand Cru Royal Millesime 2008 has is crystalline, of a discreet gold with green reflections. The nose presents the patina of the Pommery vintages: elegance, minerality, freshness. First of all intense floral notes reach us: the peony floats around the hawthorn. Maturity is expressed by fruity notes of pear and fresh apricot. The great Pinot Noir present themselves with notes of crushed fresh strawberries. On the palate, the tasting is floating, with a great uprightness. A mineral structure fills the palate from the attack to the finish like a spine. Notes of acacia honey and Mirabelle underline the central element of the tasting. The finish is punctuated by a nice sweetness, marked by flavours of blood orange.
