    The vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. Our Chablis are characterized by their freshness, power and tenacity. Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit).
     
  • Destemming, 48 hours cold maceration and spontaneous fermentation with maceration of 25 days at controlled temperature. Aged 14 month in Tonneaux. Before bottling,the wine does a little passage in concrete and then refines at least 6 months in bottle.

    The Hojo Biden Yamahai Junmai is a bold sake designed to match the rich flavors of the local Fukuoka cuisine.  Brewed a touch sweeter than a common sake, the off dry flavor is balanced by a stronger alcohol presence of 16-17% and higher than average acid from the yamahai brewing process. Aged for 2 years in bottle before release to allow the flavors to mellow and harmonize. It has notes of honey, almonds, and vanilla lead to a balanced palate. The sweetness and acidity give this Sake body and depth, which make it the perfect match for rich cuisines like grilled mackerel, miso marinated pork loin, or spicy hot pot.
