The vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. Our Chablis are characterized by their freshness, power and tenacity. Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit). -
Destemming, 48 hours cold maceration and spontaneous fermentation with maceration of 25 days at controlled temperature. Aged 14 month in Tonneaux. Before bottling,the wine does a little passage in concrete and then refines at least 6 months in bottle. -

The Hojo Biden Yamahai Junmai is a bold sake designed to match the rich flavors of the local Fukuoka cuisine. Brewed a touch sweeter than a common sake, the off dry flavor is balanced by a stronger alcohol presence of 16-17% and higher than average acid from the yamahai brewing process. Aged for 2 years in bottle before release to allow the flavors to mellow and harmonize. It has notes of honey, almonds, and vanilla lead to a balanced palate. The sweetness and acidity give this Sake body and depth, which make it the perfect match for rich cuisines like grilled mackerel, miso marinated pork loin, or spicy hot pot. -

Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. Château de Ferrand 2018 has a deep garnet color. The nose is expressive and flattering, with red fruits notes such as raspberry or wild strawberry. Then, hints of violets and toasted hazelnuts are revealed. On the palate, it is a voluptuous, gourmet and silky wine with a very airy finish, carried by the fruit. This 2018 is in line with the greatest vintages such as 2010 and 2016.
