Takeda Black Skull Tokubetsu Honjozo MNG is made to highlight the local rice, you’ll get giant aromas that change on every revisit. There’s some Ginjo fruit plus a rich caramel leaping from the glass due to the Honjozo (brewer’s alcohol) used to extract extra aroma and texture. Late on the finish, look for cocoa powder. Enjoy as an aperitif with creamy cow’s milk cheeses, pastas like Carbonara and Primavera, foie gras or pizza. Serve at any temperature. -

Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt. -

Grosset Wines is a small family-run operation entering its fifth decade. The unwavering vision is to create pure expressions of variety and place. Our four estate-owned vineyards, A-Grade Certified Organic and Biodynamic (ACO), are located in high altitude country of the Clare Valley, each site selected for its potential to produce great wine and planted by Grosset. Each is handpicked and hand pruned; each bunch of grapes harvested at optimum ripeness. Production is tiny. Single vineyard wines are the focus. The winemaking process is gentle and uncomplicated. Custodianship remains with Grosset Wines from grape growing to in-house bottling; authenticity is assured. Delightful floral aromas with hints of lime juice and beeswax - though it's white flowers that dominate. It's almost joyful or playful. On the palate, tight, fine and intense; a pure and unevolved thread of lime juice at its core. It has depth of flavour and intensity in its infancy with the suggestion that these will become hallmarks of the aged wine. -

Famille J. M. Cazes Pauillac is third wine of Chateau Lynch-Bages, a true baby Lynch-Bages. The wine is a perfect expression of Pauillac with complex flavors of tobacco, cedar, and dark berries. Created in 2009, this wine is made with grapes from younger vines, and aged in used oak barrels, offering a ready-to-drink style. A blend of 74% Cabernet Sauvignon, 23% Merlot, and 3% Cabernet Franc, Pauillac 2018 is very concentrated, with high fine grained tannins and a long finish. Excellent quality! -

Dry, clean, light-bodied and well-refined. This is a representative of the TanreiKarakuchi sake made in Niigata, the heartland of Japanese premium sake production. Kirinzan Shuzo is located near Mt. Kirin (= Kirin-zan) in Tsugawa, Niigata. Kirin is a mythical creature much like a flying unicorn, is believed to bring about happiness and luck. Food pairing:- Matches well with most of Japanese dishes, especially when served room temp or lukewarm, including raw/lightly grilled fish and shrimps, tofu, simmered vegetable, and sunomono.
- Bacon-wrapped Scallops - “The Classic” is paired with the soft, rich, nuttiness of the seared Sea Scallop because of the ricey, nutty aromas of the sake. The crispy, salty outer rim of seared bacon needs the strong more intensely forward flavors that the sake provides.
