Le Lion de La Fleur de Boüard is made from the estate’s young vines. The estate’s second wine since 2011, it is made by fermentation and gentle, gravity-fed extraction in small inverted truncated-cone tanks. Le Lion de la Fleur de Bouard 2020 expresses a fruity intensity. Ageing in tank with 15% new French barrels which brings out fine oaky notes.

he only Sakagura/Sake Brewery in Kochi City (named after alias of Yamauchi Yōdō, who was a Japanese Daimyo of the Shikoku region in the Edo period). They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. A reserved aroma, gentle rice notes, perfect acidity and a fine finish combine to create the unique flavor profile of Suigei Tokubetsu Junmai.

Gramona La Cuvee 2019 has a pale yellow, steel edges (white gold) color. On the nose the wine has medium intensity. Elegant floral notes wrapped in stone fruit (peach, apricot ), golden apple, lemon peel, pineapple. Notes of bakery, nuts such as almonds and some balsamic such as fennel and bay leaf. On the palate the wine has a round entrance, medium enveloping body, crispy carbonic texture. In the retronasal route citrus memories return, the apple, the almond. Very refreshing and long nish. Perfect as an appetizer that can be extended to the rest of the meal. Gastronomic and versatile.

The wine continue to ferment inside the bottle up to the indicated pressure. The sugar in sparkling wine and it ́s pressure are obtained naturally. The Graham’s 2017 can be enjoyed anytime and pairs wonderfully with dark chocolate desserts as well as semi-cured and cured cheeses like Cheddar and Manchego. On the nose it has a lovely honeysuckle fragrance as well as hints of mint, along with bright, attractive tropical fruit notes in the background. On the palate it has notes of ripe black fruit combining with hints of kirsch. The fine-grained tannins give the wine balance and structure, whilst good acidity underscores the wine’s freshness.
