Honkara is an abbreviation for “Honjozo Karakuchi”, which is a classic type of sake. Honjozo’s are rich and robust. “Karakuchi” means it is dry. This Honkara is a wonderful representation of the style. It has a light and silky mouthfeel, some marshmallow sweetness, melon, and a crisp dry finish. Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.
Tasting Note: Savory aromas of pumpkin and spices with complex earthy flavors. The finish is dry and long lasting.
Food Pairing: Serve at room temperature or warmed with slow-cooked pork belly, braised short rib, and nutty cheese.

Elegant floral notes wrapped in stone fruit (peach, apricot ), golden apple, lemon peel, pineapple. Notes of bakery, nuts such as almonds and some balsamic such as fennel and bay leaf. On the palate the wine has a round entrance, medium enveloping body, crispy carbonic texture. In the retronasal route citrus memories return, the apple, the almond. Very refreshing and long nish. All batches are kept separate during winemaking to maximise blending options and the complexity of the final wines. The wine then goes through secondary fermentation in bottles and is aged on yeast lees for as long as possible with the average age of the final blend being 18 months to two years. -

Kumeu River Village Chardonnay 2022 is made from grapes grown in Kumeu and Hawkes Bay. It was fermented in a mix of old French oak barriques (33%) and stainless steel tanks (67%). The barrel fermentation adds some richness but little oak flavor, while the tank fermentation allows the vibrant fruit to shine through.The wine has lively lime and lemon aromas, a flinty, mineral edge, and hints of fig and white peach. The 2022 Vintage was another good year, with Hawkes Bay fruit making up 55% of the final blend. The mid-palate is weighty with peachy ripeness and crisp acidity that gives the wine a refreshing, cleansing quality. This wine is enjoyable as an aperitif, and even better when paired with fish and shellfish. -
