Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.
Tasting Note: Savory aromas of pumpkin and spices with complex earthy flavors. The finish is dry and long lasting.
Food Pairing: Serve at room temperature or warmed with slow-cooked pork belly, braised short rib, and nutty cheese.

Founded in the 1540’s, the Tomita Brewery is one of the oldest breweries in Japan and is now managed by the 15th generation of the family, Yasunobu Tomita, who is also the brewmaster. The Tomita’s named their sake Shichi Hon Yari, or “Seven Spearsmen,” after the leaders of the historic Battle of Shizugatake which was fought just outside their town of Kinomoto. Shichi Hon Yari Junmai is the classic representation of the brewery’s style with its traditional and modern dimensions. Earthy and rich aromatics and flavors meet elegance and softness in the finish. Chateau La Gordonne La Chapelle Gordonne Tete de Cuvee Rose has a litchee-pink colour, very pale and limpid. It aromas has notes of pink grapefruit and linden blossom notes reveal this wine’s very rich mineral quality in a poetic evocation of the sun rising over the Provence Garrigue on a summer day. On the palate the wine is ample and balanced around sensations of freshness, delicacy and sweetness. It is bursting with small fresh fruits such as the arbutus berries on the wooded hillsides of the schist terroir of the Château la Gordonne. Palazzo della Torre is one of the wines that has made Allegrini famous internationally, as it was the precursor of the double fermentation method: most of the grapes are vinified at harvest, while the remaining part is left to partially dry (appassimento). In January the wine is blended with the raisinated grapes, and a second fermentation begins. It then ages in second use French oak barriques for 15 months. A blend of Corvina Veronese, Corvinone, Rondinella and Sangiovese, this is an elegant, harmonious wine with considerable structure. Expect notes of vanilla, black pepper and cloves, with gentle nuances of raisined grapes. The palate is velvety, with soft tannins and a long and persistent finish. -

Honkara is an abbreviation for “Honjozo Karakuchi”, which is a classic type of sake. Honjozo’s are rich and robust. “Karakuchi” means it is dry. This Honkara is a wonderful representation of the style. It has a light and silky mouthfeel, some marshmallow sweetness, melon, and a crisp dry finish. Atop the hierarchy of Beaujolais Crus are Moulin-à-Vent and Morgon, with notable ageing potential. Morgon is robust and structured and can mature for a minimum 5-20 years. Purchased by Maison Louis Jadot in 2001, this south- to southeast-facing vineyard is situated on the slopes over the village of Villié Morgon. It covers 87.5 acres of the Morgon appellation, one of the 10 Crus of Beaujolais. This wine is vinified in vats for 10 to 20 days and then matured in oak barrels before bottling. Very deep in color, this wine - blend of three single vineyards (Bellevue, Côte du Py & Roche noire) - shows a brilliant and large aromatic palette (spices, ripen black fruit). On the palate, the tannins are still a bit firm - which indicates the potential of ageing – and they are well balanced by a great tension. A perfect partner for charcuterie, pasta in a rich cream sauce, pizza and pretty much any meat. Patty Green and Jim Anderson started Patricia Green Cellars in 2000 after walking away from a very successful winery that they had built up since its inception in 1993. As karma would have it they were offered the opportunity, out of almost nowhere, to purchase a winery and vineyard that were located in the area that would become to be known as the Ribbon Ridge AVA. The winery was built on the idea that there were great vineyards in Oregon that could produce uniquely excellent wines if people dedicated themselves to the farming and winemaking necessary to do so. Over many vintages that ideal expanded as experience was gained, the winery grew and the sophistication of the vision adapted to the times. The 2021 vintage is an unusual one where the high heat neither translated into dark nor high alcohol wines. Wines are particularly red fruited, ripe, supple and delicious at early ages in this vintage. Perfect for a bottling that values consumption at a youthful age.Winemaker notes:
