Dassai 45 Nigori Junmai Daiginjo is a premium Japanese sake produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan. It is a unique variation of the Dassai 45 Junmai Daiginjo that incorporates the traditional Japanese brewing method of nigori, which involves leaving some of the rice sediment in the sake after it is pressed. Junmai refers to sake that is made purely from rice, water, yeast, and koji. Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Rotlay is a parcel of vines within the larger Sonnenuhr vineyard, vinified separately for this bottling thanks to the unusual beauty and complexity of its wines. The Sonnenuhr (‘sundial’) vineyard itself is one of the most celebrated in the Mosel, and this precipitously steep part of it yields a wonderful example of the vineyard’s style in this cool corner of the Mosel: light but intensely flavored. 2020 was a warm vintage (the last in a trio of warm years) but with cooler weather at harvest. This ensured freshness and balance in the wines, which are remarkably easy to drink while maintaining all the tension and elegance typical of Mosel Riesling. The Rotlay in 2020 showcases the cool, understated style of Heinrichshof’s wines: delicate hints of spice, flowers and slatey mineral seduce rather than overwhelm the drinker. Additional complexity of flavor may be expected when aged for 4-5 years after the vintage. -

They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. The aroma is modest and vaguely citrusy, and the flavor has a hint of sourness with solid umami, yet the finish is clean and pleasant. Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.

Gramona La Cuvee 2019 has a pale yellow, steel edges (white gold) color. On the nose the wine has medium intensity. Elegant floral notes wrapped in stone fruit (peach, apricot ), golden apple, lemon peel, pineapple. Notes of bakery, nuts such as almonds and some balsamic such as fennel and bay leaf. On the palate the wine has a round entrance, medium enveloping body, crispy carbonic texture. In the retronasal route citrus memories return, the apple, the almond. Very refreshing and long nish. Atop the hierarchy of Beaujolais Crus are Moulin-à-Vent and Morgon, with notable ageing potential. Morgon is robust and structured and can mature for a minimum 5-20 years. Purchased by Maison Louis Jadot in 2001, this south- to southeast-facing vineyard is situated on the slopes over the village of Villié Morgon. It covers 87.5 acres of the Morgon appellation, one of the 10 Crus of Beaujolais. This wine is vinified in vats for 10 to 20 days and then matured in oak barrels before bottling. Very deep in color, this wine - blend of three single vineyards (Bellevue, Côte du Py & Roche noire) - shows a brilliant and large aromatic palette (spices, ripen black fruit). On the palate, the tannins are still a bit firm - which indicates the potential of ageing – and they are well balanced by a great tension. A perfect partner for charcuterie, pasta in a rich cream sauce, pizza and pretty much any meat. Patty Green and Jim Anderson started Patricia Green Cellars in 2000 after walking away from a very successful winery that they had built up since its inception in 1993. As karma would have it they were offered the opportunity, out of almost nowhere, to purchase a winery and vineyard that were located in the area that would become to be known as the Ribbon Ridge AVA. The winery was built on the idea that there were great vineyards in Oregon that could produce uniquely excellent wines if people dedicated themselves to the farming and winemaking necessary to do so. Over many vintages that ideal expanded as experience was gained, the winery grew and the sophistication of the vision adapted to the times. The 2021 vintage is an unusual one where the high heat neither translated into dark nor high alcohol wines. The Jansz Premium NV Rosé is based upon Jansz wines of several vintages. Specially selected and crafted individual batches from cool climate locations in Tasmania, form this wine. Every site used to source grapes is specifically designated to growing fruit for sparkling wine. All batches are kept separate during winemaking to maximise blending options and the complexity of the final wines. The wine then goes through secondary fermentation in bottles and is aged on yeast lees for as long as possible with the average age of the final blend being 18 months to two years. -

Cantine Bertani has been making wines in the Veneto region of Italy for more than 150 years. They have consistently strived to combine tradition and research to create wines of uncompromising quality with a distinct identity. As part of the ripasso technique, the wine is 'passed over' dried grapes to contribute depth and character. Ripasso styles, such as this one, can therefore offer the best of both worlds: notes of ripe red cherry and underbrush (that you often find with Valpolicella), alongside those of spice and chocolate (often found with Amarone). This wine is full-bodied with velvety tannins, aged in barrels and cement vats before spending three further months in bottle prior to release.
