The Uccelliera estate is located in the warm southern Castelnuovo dell’Abate part of the Montalcino zone. The vineyards range from 150 to 350 meters above sea level. Uccelliera Brunello di Montalcino 2018 is aged 24 months in a mix of French and Slavonian oak. The wine has aromas of black cherries, plums, and walnuts with undertones of cedar. The palate is dense and full-bodied, with rich tannins, and a complex finish. -

Sourced from a small selection of our favourite Semillon blocks, the grapes were both hand and machine picked before gentle pressing and fermentation in stainless steel tanks. The wine then spent a few months on yeast lees to gain extra complexity and mouth feel. -

Toko Sun Rise Junmai Ginjo is made from Dewasansan rice, a descendant of the iconic Omachi heirloom strain. This rice is exclusively grown in Yamagata prefecture and helped to pave the way for Yamagata to receive the first geographical indication (GI), or appellation, in all of Japan. Toko Sun Rise Junmai Ginjo has some grassy, floral aromas with green apple and melon notes. The finish is soft and smooth. It is an excellent pairing with teriyaki salmon, sautéed snow pea shoots or maple glazed ham. -
Tokara Cabernet Sauvignon 2021 has a bright claret color. On the nose the wine has aromas of dark plum, subtle cassis and blackberry followed by spices and the slightest hint of vanilla. The palate has notes of dark fruit interwoven in spice and light toast from the barrels. Enjoy with lightly smoked Springbok carpaccio, grilled veal chops, braised meat dishes or a juicy steak. -
Tinto Pesquera Reserva 2019 has a brilliant color with an attractive black cherry hue. On the nose the wine is complex and very elegant. Aromas of red and black fruits with balsamic and toasted notes, such as vanilla and liquorice. On the palate it is full, rich and lingering in mouth with silky, enveloping tannins. Fruit flavours come through well and are very well-integrated with the oak. -

Honda Shoten only uses the best of the best, super high-quality Yamadanishiki rice grown in Hyogo prefecture’s Miki city and Kato city. This is the basis of their art, and they only will use this top tier rice. Their sake’s names bear the names of the farms that they source their rice from. Nearly all of the rice they use to brew is locally grown Miyama Nishiki and Dewasansan. In 2014, ANA International picked this sake for their First Class and Business Class sake. Using the locally grown Dewasansan sake rice and only native Yamagata Kobo, Tatenokawa achieves an elegant sake with surprising complexity and energy.
