All sherries are aged following the traditional Solera system where the wines are blended in 600 litre American oak casks. Many styles are produced with distinctive characters depending on whether they have been aged under the influence of the flor (a layer of natural yeast) or as an oloroso (in contact with oxygen).

González Byass was created in 1835 by Manuel Maria González and remains in family hands today, now in the fifth and sixth generation. Founded in Jerez de la Frontera, Andalusia, in the heart of Sherry country, it is dedicated to the production of high quality sherries. The Sherry triangle, made up of Jerez de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda, has a unique microclimate influenced by the surrounding Atlantic Ocean and Guadalquivir and Guadalete rivers. Production is dominated by the Palomino variety, and vines are planted in the white Albariza soil, with high chalk content which is excellent for retaining moisture. These soil conditions, combined with over 3,000 hours of annual sunshine, fresh, humid breezes from the west (poniente) and warm, dry breezes from the east (levante) have formed the perfect marriage with the Palomino variety to produce an array of sherry styles. -
Jim Barry The Cover Drive Cabernet Sauvignon 2020 has a deep ruby red color with a crimson hue. On the nose it has a classic Cabernet notes of berry compote and dark cherry combine with nuances of olive leaf and lifted red florals. The palate is lively with bright red berries and dark cherry fruit. The wine has an even pull through the palate with fine tannins and a moreish finish. -
Ruby red intense, tending towards violet with violet and fruit berries and distinctly vinous bouquet.It is a dry, full-bodied and slightly tannic and pairs with cured meats, first courses, red meats and cheeses. -

Casa Ferreirinha Vinha Grande Douro 2021 has a ruby red color. On the nose it has notes of plum, spice, resin and cedar, all very well integrated with subtle oak. It is a well balanced wine with firm, well-textured tannins and attractive acidity. Its finish is very long and harmonious. -

he only Sakagura/Sake Brewery in Kochi City (named after alias of Yamauchi Yōdō, who was a Japanese Daimyo of the Shikoku region in the Edo period). They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. A reserved aroma, gentle rice notes, perfect acidity and a fine finish combine to create the unique flavor profile of Suigei Tokubetsu Junmai. -
