Tatenokawa Three Peaks Junmai Daiginjo
Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price. Nearly all of the rice they use to brew is locally grown Miyama Nishiki and Dewasansan. In 2014, ANA International picked this sake for their First Class and Business Class sake. Using the locally grown Dewasansan sake rice and only native Yamagata Kobo, Tatenokawa achieves an elegant sake with surprising complexity and energy. Relatively high acidity with a grapefruit peel-like aroma and flavor. Just the right amount of sweetness offers balance and leads every sip into a refreshing finish.
Akashi-Tai Junmai Daiginjo Genshu Sake
The most intense flavours of the Yamadanishiki rice have been drawn out to achieve a highly floral, delicate sake with a salty palate and a rich and aromatic minerality. Akashi-Tai Junmai Daiginjo Genshu Sake has aromas of melon, lemon, bitter orange, sage and subtle herbaceous. On the palate it offers a perfect balance of lemon and bitter orange to offer a long-lasting finish.
Hakkaisan Snow Aged 3 Years Junmai Daiginjo Yukimuro Sake
Hakkaisan Snow Aged 3 Years Junmai Daiginjo Yukimuro Sake is a premium sake produced by Hakkaisan Brewery, located in the Niigata prefecture of Japan. This sake is unique in that it has been aged for three years in a yukimuro, a traditional snow storage room. The cold, consistent temperature of the yukimuro during the winter months allows the sake to mature slowly and develop a rich and complex flavor profile. The aroma of Hakkaisan Snow Aged 3 Years Junmai Daiginjo Yukimuro Sake is elegant and floral, with notes of white peach, apricot, and plum. On the palate, it is smooth and full-bodied, with a rich and layered taste that is both sweet and savory, with a hint of umami. It has a clean and refreshing finish, with a subtle and lingering aftertaste. The snow-aged sake is made from high-quality rice, which is polished to a ratio of 50%, resulting in a refined and delicate flavor. The sake is brewed using traditional methods, including a long fermentation period and careful filtration to remove impurities. Pairs well with Mediterranean seafood, washed cheese, or dry-aged beef such as short ribs. Overall, Hakkaisan Snow Aged 3 Years Junmai Daiginjo Yukimuro Sake is a rare and luxurious sake that is perfect for those who appreciate the complex and nuanced flavors of traditional Japanese beverage. The yukimuro aging process adds a unique depth and character to the sake, making it a truly special and unforgettable experience. Gluteen Free | No Preservatives | No additives | Vegan Friendly
