Tatenokawa Tatenyan Junmai Daiginjo Sake

Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.
Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.
With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt.

Senkin Modern Muku is the brewery’s flagship brand, brewed 100% with local Sakura city Yamada Nishiki rice. Part of their “modern” series (meaning that it was brewed with modern methods), the brewery touts this as their daily drinking sake - one that fits in your class as comfortably as wearing a clean white shirt. Muku, meaning pure or innocent, refers to a lack of excessive embellishment in the sake. It has a sharp, vibrantly fruity flavor with a well-balanced umami heft, and the brewery encourages drinkers to try enjoying their sake out of Boudreaux wine glasses to maximize the sensory potential of the brew. Brewed in the same way with the same ingredients as Pearls of Simplicity but with a touch of distilled alcohol to open up aromatics and lighten the overall impact. Konteki means “dew drops of the earth” while Higashiyama (the brewery name) translates to “eastern hill.“ Brewery workers have been known to start their days watching the sun rise over the mountains until the dew drops glisten as if they were the Tears of Dawn. Konteki Tears of Dawn Daiginjo Sake has notes of tropical banana, anise seed, and truffle. These same flavors come rushing through the full-bodied palate followed by a velvety and dangerously smooth finish. Try with braised pork ribs, fresh oysters or smoked gouda cheese.

Born in 1976 with the name of Franciacorta Pinot, this wine marks our initial foray into the world of Franciacortas. In 1991, with the name Franciacorta Brut N.V., it takes on an increasingly recognizable style, more expressive of its terroir. In 2005, after more than 30 years of experimentation and dedication, it matures into Cuvée Prestige and acquires its own well-defined identity. Following a constant reduction in the liqueur added at disgorging, in order to exalt the characteristics of the grapes, with the 2017 harvest it adds Edizione to its name, allowing the gustatory memory to precisely identify the various nuances of each interpretation.

Konteki Pearls of Simplicity Junmai Daiginjo Sake

The epitome of purity, this sake is more subtle and nuanced than most highly aromatic Junmai Daiginjos. It is based on the ideals of Zen Buddhism and "wabi-sabi," the belief that beauty within the arts should be as understated and pure as a simple strand of pearls. One of two sakes brewed in exactly the same way with the same ingredients, except this one is a Junmai Daignjo and Tears of Dawn has added distilled alcohol to open up aromatics. Aromas of white flower and Asian pear followed by clean flavors of honeydew, lemon, and a hint of licorice. Finishes elegantly with rich minerality and rice texture. This is a great sipping sake but also a wonderful companion to scallops, pork, and light meats.
