Produced by Imada Shuzo, a sake brewery located in the Hiroshima prefecture, the birthplace of Ginjo sake, which is known for remarkably soft water that requires expert skill to use in sake production. This sake is made using high-quality Yamada Nishikii rice, which is polished to a ratio of 55%, resulting in a refined and delicate flavor. The notes of Fukucho Moon on the Water Junmai Ginjo is floral and fruity like lime and melon with bold hints of fennel, white pepper and allspice. The flavors gravitate to ripe cantaloupe and anise while the minerality from the soft water is evident in the finish.
