Suigei Tokubetsu Junmai

he only Sakagura/Sake Brewery in Kochi City (named after alias of Yamauchi Yōdō, who was a Japanese Daimyo of the Shikoku region in the Edo period). They hope to make sake that is the best to pair with food - sake that is dry, yet with high acidity and umami - using the isolated Tosa Mountain range's pure spring water. This water contains no iron or manganese, which are detrimental elements in sake. The brewery is also quite particular about their ingredients - the rice is polished very carefully, and they use true Kumamoto Yeast. A reserved aroma, gentle rice notes, perfect acidity and a fine finish combine to create the unique flavor profile of Suigei Tokubetsu Junmai.

Tatenokawa 18 Junmai Daiginjo

Tatenokawa 18 Nakadori Junmai Daiginjo Sake uses rice polished down (semabuai) to 18% of the original grain size - the highest polishing ratio in the entirety of Japan. Furthermore, instead of blending the brewer only bottles the best portion of the pressed sake (called the nakadori) as it holds the best flavor. With magnificent aromatics and a complex, brilliant flavor, Tatenokawa 18 is the essence of luxury. A true gem.  

Tatenokawa Tatenyan Junmai Daiginjo Sake

Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.
Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.
With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt.

Tatenokawa Three Peaks Junmai Daiginjo

Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price. Nearly all of the rice they use to brew is locally grown Miyama Nishiki and Dewasansan. In 2014, ANA International picked this sake for their First Class and Business Class sake. Using the locally grown Dewasansan sake rice and only native Yamagata Kobo, Tatenokawa achieves an elegant sake with surprising complexity and energy. Relatively high acidity with a grapefruit peel-like aroma and flavor. Just the right amount of sweetness offers balance and leads every sip into a refreshing finish.

As far as Sake Rice goes, Yamadanishiki is king, and within Yamadanishiki there are various rankings. Honda Shoten only uses the best of the best, super high-quality Yamadanishiki rice grown in Hyogo prefecture’s Miki city and Kato city. This is the basis of their art, and they only will use this top tier rice. Their sake’s names bear the names of the farms that they source their rice from. The cherry blossom shaped gold flakes infused in this sake imparts luxurious feel making this a top choice for special occasions. Soft on the palate, the balanced layers of sweetness and richness spread widely in the mouth as it follows through with a refreshing acidic tail.

The area’s natural underground springs provide Tentaka with a pure, fresh water source, which is also triple-filtered. Tentaka Organaka Junmai is a sake with clean, dry, and straightforward, with bright banana and mild melon aromas and soft, subdued rice flavors. Try to pair it with brussels sprouts, butternut squash, shiitake mushrooms, or pork loin. Kampai!!

Tenuta Guado al Tasso Il Bruciato 2022 is a modern interpretation of Bolgheri’s unique terroir made from carefully selected Cabernet Sauvignon, Merlot and Syrah grapes from Guado al Tasso’s vineyards. Tenuta Guado al Tasso Il Bruciato 2022 is an intense ruby red color. Its nose is intense and enticing with notes of currants, blackberries, delicate hints of vanilla and sweet spices. Excellent harmony on the palate where a fruity finish dominates and imparts good persistence and easy drinkability.
