Manzanilla Papirusa
Aged following a biological ageing, under a veil of yeast called “flor” in the cool, humid, salty air of Sanlúcar de Barrameda, a fishing town on the estuary of the Guadalquivir river. Bright yellow colour with golden reflections. This Manzanilla is laced with sea breeze scents and pleasant chamomile and flor aromas. Bone dry and light, fresh and crisp, with a hint of sea salt on the palate. Delicate and refreshingly acid with a lingering aftertaste. Papirusa means “elegant and beautiful”. It was the name of the doll that Emilio Lustau gave the daughter of Joaquín Burgos, first manager of Bodegas Lustau in the ’40s.Bone dry and light, fresh and crisp, with a hint of sea salt on the palate.

Castillo Ygay is always made from grapes sourced from La Plana, a 40-hectare (98-acre) vineyard, planted in 1950 and located at 485 meters altitude, the highest area of Ygay Estate; the 300-hectare estate surrounding the winery in Rioja Alta.
The tempranillo is aged for 28 months in 225-litre American oak barrels and the mazuelo is aged for 28 months in 225-litre French oak barrels.

Fermentation is done with 50% whole bunches with wild yeasts in small french oak vats.
