The plot "La Mazière" stands north of the village, along the Route des Grands Crus and spreads over 2.2 hectares. Its name comes from the latin word MACERIA that refers to an enclosure wall made in dry masonry and to some extent, also refers to the ruins of stone houses. Bouchard Aine & Fils Fixin La Maziere 2020 has an elegant ruby red color. On the nose the wine has a very charming bouquet dominated by little fruits aromas : such as black cherry, blackberry and blueberry. -

They are a small negotiant house, growing and buying grapes. Bouzy is a Grand Cru village, one of the highest-rated vineyards in Champagne, and well known for the quality of its Pinot Noir grapes, perfect for the creation of this cuvee. The Champagne Baron D'Auvergne Fine Fleur is a Blanc de Noirs, made exclusively from Pinot Noir grapes, and aged on lees for 36 months, resulting in its complex flavors and delicate effervescence. The dosage is only 9 g/l RS, creating a Brut style.On the nose this Blanc de Noirs Grand Cru reveals a symphony of aromas. Expect notes of ripe red fruits like raspberries, toasted brioche, and a hint of almond. Champagne Chartogne-Taillet Rose Brut is a blended Champagne that offers two distinct and successive taste profiles. This wine first enrobes the mouth with a mellow texture, then is long on the palate, leaving a delicate and precise consistency. Le Rosé is a blended Champagne composed of Chardonnay, and red grape varieties (mostly Pinot Noir). The blended red wine comes from one of two plots recognised for the quality of their red-wine grapes. In certain years, from the Orizeaux plot, and since 2017, from the Les Fontaines plot in Saint Thierry. Le Rosé is an exception among the house's wines. It requires more varied oenological work than our single-vineyard Champagnes do. The effect of this addition of red wine to white wine necessitates specific decisions to avoid excess opulence, fruitiness or tannicity. -

Elevated to new heights, it unfurls across every dimensions – wider, deeper, longer, more intense - and gifted further with an extended longevity. The 2004 fruit remains discreet, yet more clearly defined in this second life of the Vintage. Citrusy notes of pink grapefruit and blood oranges gently cede to figs. The additional time on the lees elevates the minerality of the vintage with the sublime maturity that is Dom Pérignon’s signature. Cocoa, mocha, roasted nuts, brioche and honey. A unique champagne in that it is composed of 100% Meunier, a grape that typically plays a supporting role in this region. Following a hand harvest the grapes go through alcoholic and malolactic fermentation in stainless steel vats. Afterwards, the new wine is blended with an impressive 50% reserve wine from the 2012-2014 vintages. Once bottled, it spends almost three years on the lees, gaining complexity. As an extra brut it receives only a small amount of dosage at 3g/L. The aromatics are all ripe orchard fruits, bright citrus, white pepper and minerality. The palate is full of fresh fruit, despite the low dosage, and thanks to the pure Meunier fruit. It is nearly full bodied and has flavors of pear, cherry, plum, brioche and apple skin. Pair with tuna steaks or salty, nutty cheeses. -

Champagne Louis Roederer Blanc de Blancs 2015 has a bright yellow hue with slightly green tints and bubbles that are soft, creamy, fine and delicate. The bouquet is precise and mineral with notes of ripe citrus fruit and white, almost vanilla-like blossoms (pollen) and notes of freshly harvested wheat and almonds. The freshness of the bouquet comes through in the form of minty and iodised aromas (sea spray) which slowly evolve towards warmer notes of smoke, hot butter and toast. The palate is creamy and soft yet concentrated on entry. The wine, underpinned by the delicate bubbles, unfolds majestically. It offers us the sensation of ripe, concentrated juice carried by an incredibly powdery texture with a distinctly saline finish. Oaky and smoky notes continue to draw out the wine, giving it extra length and concentration, an indication of its exceptional cellar-ageing potential. The finish is pure, refreshing and mouthwatering.
