This very special bottle was originally conceived by the 5th generation current brewery owner Kosuke Kuji and the late legend brewmaster Hajime Yamaguchi. Nanbu Bijin 10 Years Aged Daiginjo is a well-structured Daiginjo with a silky mouthfeel and elegantly clean finish. The subtle notes of fuji apple, white peach and musk melon dance around the nose and play a lively game of contrast against the delicate grain and spice notes that are hidden on first impression. This sake is then produced using a time consuming shizuku method where drops of sake are collected through gravity versus being pressed, it is then aged in 1.8L bottles for 10 years before final bottling. Nanbu Bijin brewery makes limited releases of this sake only available to select restaurants in the U.S. and very special sake stores.

Cantine Bertani has been making wines in the Veneto region of Italy for more than 150 years. They have consistently strived to combine tradition and research to create wines of uncompromising quality with a distinct identity. Grapes are dried in traditional drying rooms, where they rest on racks for 99 days before the winemaking process begins. An intense red color with hints of garnet, this wine offers succulent red plums and morello cherries on the nose, as well as notes of tea leaves, licorice, and spices. The Bertani Amarone has been described as “larger than life.” This power is balanced by elegance on the dry palate, which showcases red berries sweetened by soft notes of spices. Eight years of ageing in Slavonian oak barrels in conjunction with one further year of ageing in bottle have further contributed to this wine’s complexity. Domaine Antonin Guyon Corton Bressandes Grand Cru 2017 offers an exceptional range of Burgundies, mostly in the premier crus and the grand crus of the region. Corton is unique as it is the Côte de Beaune's only red grand cru appellation. This wine has a generous nose of juicy black fruit, cherries in particular. The palate is rich and full-bodied, offering vanilla, licorice, and an oak-spiciness from 18 months in French oak barrels, 50% of which were new. The concentration and broad tannin structure of this wine means it will continue to develop for the next 20 years. An excellent pairing for roasted meat, game, and most cheeses. -

The wine undergoes a six to seven-year sur lattes aging period, followed by an additional six to twelve months of post-disgorgement maturation. Tasting Notes: Cristal 2015 is a Champagne that engages the palate with its complexity and finesse. Its aromatic profile reveals nuances of yellow fruit, toasted almonds, and wheat from the Chardonnay, seamlessly integrated with the Pinot Noir's succulent red fruit notes. Barolo Perno Riserva, it is the first and only one Barolo Riserva from Castello di Perno, a small parcel of 0.3 hectares in the CRU Perno always located in Monforte d'Alba which is producing only a total of 1100 bottles every year. This parcel is the oldest in Perno called "vigna della Croce". The vineyards have been planted in 1940 and the Nebbiolo is 100% Michet clone (not always easy to find 100% pure Michet in a single vineyard) and the vineyards are in front of Bricco Rocche in Castiglione Falletto, thanks to this influence of mineral soil between limestone and sand, the beautiful exposition and the good altitude of 430 meters we obtain a Barolo with a plenty of elegance, freshness and aromaticity. The wines show generous, juicy fruit with a proper tannic core and plenty of the energy that is in short supply in 2017. Castello di Perno has a vineyard plot in the cru of Perno. With its almost 200 ha (494 acres) Perno is pushing the 'cru' concept a little, but the Castello di Perno plot, sitting on the crest of the hill, truly stands out. From it in 2017 a fantastic, vibrant Barolo with crunchy red fruit has been produced -

Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price. Nearly all of the rice they use to brew is locally grown Miyama Nishiki and Dewasansan. In 2014, ANA International picked this sake for their First Class and Business Class sake. Using the locally grown Dewasansan sake rice and only native Yamagata Kobo, Tatenokawa achieves an elegant sake with surprising complexity and energy. Relatively high acidity with a grapefruit peel-like aroma and flavor. Just the right amount of sweetness offers balance and leads every sip into a refreshing finish. -
