Dense on the palate, with great volume, it has a well-integrated acidity that frames notes of milk chocolate and sour cherry.     Dassai 45 Junmai Daiginjo is a premium Japanese sake that is highly regarded for its exceptional quality and complex flavor profile. It is produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan, using only the finest rice and water. Junmai refers to sake that is made purely from rice, water, yeast, and koji. Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai 45 Junmai Daiginjo is made using Yamada Nishiki rice, which is considered one of the best sake rice varieties in Japan. It has a polished ratio of 45%. This allows for a rich and complex flavor profile with a smooth, clean finish. The sake is characterized by a delicate aroma and a balanced sweetness, with notes of pear, honeydew, and white peach. Overall, Dassai 45 Junmai Daiginjo is a highly sought-after sake that is often served as a special occasion drink or as a gift to those who appreciate fine sake.     Robert Parker's Wine Advocate 94 points:  "The 2015 Haut Batailley is a blend of 72% Cabernet Sauvignon and 28% Merlot, matured in 60% new oak. It was picked between 21 September until 2 October. It is a level up from the 2015 Lacoste Borie with much more fruit intensity: blackberry, boysenberry, tobacco and cedar aromas. It gathers momentum in the glass and develops a subtle mint accent. The palate is medium-bodied with supple, lithe tannin, very well balanced with just a slight tinniness that will disappear by the time in bottle. I love the pencil shaving sprinkled over the aftertaste here. With very good substance and impressive length, this is a classic Pauillac that I suspect will offer 25 or 30 years of pleasure."

    Mizumoto is a traditional brewing method dating back 500 years. Both the acidity and yeast are open fermentation. Possibly the highest acid sake you’ve ever had. Don’t worry though, there’s richness and umami to balance it. Enjoy robust aromas of sweet muscat and fresh hay with hints of wildflower honey and dried pineapple. So juicy on the palate: Kiwi, passion fruit, white grape jelly. For the Riesling lover. Made with super geeky Aiyama (the brewer’s rice) grown in Hyogo. Double Koji. White Koji. It should be served chilled in a white wine glass, recommended with grilled pork chops.

    Made with yeast derived from a rose flower. It looks cherry colored from the yeast but it smells like cherries too. It’s creamy and packed with umami from the cold lactic fermentation (Kimoto) and the super geeky Hyogo grown Aiyama rice only polished to 90%. Then the rose flower yeast adds a layer of refreshing acidity and a hint of sweetness. Afuri Ohana Kimoto Junmai Muroka Nama can be served chilled or room temperature, try it with grilled pork, seared steak or as you begin your afternoon.
