    Made with yeast derived from a rose flower. It looks cherry colored from the yeast but it smells like cherries too. It’s creamy and packed with umami from the cold lactic fermentation (Kimoto) and the super geeky Hyogo grown Aiyama rice only polished to 90%. Then the rose flower yeast adds a layer of refreshing acidity and a hint of sweetness. Afuri Ohana Kimoto Junmai Muroka Nama can be served chilled or room temperature, try it with grilled pork, seared steak or as you begin your afternoon.

    Banfi Brunello di Montalcino 2018 is a rich and elegant Brunello, both in structure and in olfactory expression.   • Castello di Perno is an up-and-coming estate in Piedmont of which wine lovers will be hearing a lot more in years to come. The wines are made by one of the region’s top winemakers, Gian Luca Colombo, and the style is described as "neoclassical" by Nick Jackson MW; not a traditionalist, not a modernist producer, but a new classic style of Barolo.  The 2019 vintage of Castello di Perno is 100% Nebbiolo, aged for 24 months in Austrian oak casks and 12 months in bottle. Expect aromas of dried flowers, truffles and cranberries. The balanced palate has high tight-grained tannins and complex earthy and herbal notes, with an elegant long finish. We had the honor of hosting Castello di Perno at 305 Wines and tasted a range of their wines. All highly recommended.

They are a small negotiant house, growing and buying grapes. Bouzy is a Grand Cru village, one of the highest-rated vineyards in Champagne, and well known for the quality of its Pinot Noir grapes, perfect for the creation of this cuvee. The Champagne Baron D'Auvergne Fine Fleur is a Blanc de Noirs, made exclusively from Pinot Noir grapes, and aged on lees for 36 months, resulting in its complex flavors and delicate effervescence. The dosage is only 9 g/l RS, creating a Brut style.
    On the nose this Blanc de Noirs Grand Cru reveals a symphony of aromas. Expect notes of ripe red fruits like raspberries, toasted brioche, and a hint of almond. On the palate, it is rich and full-bodied, with a fine mousse and a balanced acidity that brings freshness and a lively character to the wine. The finish is long, with a lingering taste of honeyed fruit and a hint of spice.
    Food pairing: Blanc de Noir champagnes have a robust character and complex flavors, which make them versatile companions to rich seafood dishes like lobster or scallops. It also complements the earthy flavors of a mushroom risotto, and for a classic pairing, try it with Comté or Brie cheese.

    Robert Parker's Wine Advocate 94 points:  "The 2015 Haut Batailley is a blend of 72% Cabernet Sauvignon and 28% Merlot, matured in 60% new oak. It was picked between 21 September until 2 October. It is a level up from the 2015 Lacoste Borie with much more fruit intensity: blackberry, boysenberry, tobacco and cedar aromas. It gathers momentum in the glass and develops a subtle mint accent. The palate is medium-bodied with supple, lithe tannin, very well balanced with just a slight tinniness that will disappear by the time in bottle. I love the pencil shaving sprinkled over the aftertaste here. With very good substance and impressive length, this is a classic Pauillac that I suspect will offer 25 or 30 years of pleasure."
