Cave Caloz is a family run winery that was established three generations ago and whose wine production guarantees the health and nourishment of the land, whilst benevolently using natural and human resources. The grapes, which are harvested by hand and vinified in our cellar, produce vintages that bring joy and meaning to our profession. The winery was founded by Fernand, who built both the cellar and the family house in 1960. Color: Straw Aromas: honey and white flower. Palate:  Spiced lemon flavors with snappy acidity. Nicely textured and round with a tingle to finish.

Made to the same rigorous standards as the First Wine, from grapes grown in the same vineyard, La Dame de Montrose is the estate’s second label. Supple and silky Merlot generally predominates in the varietal mix. Its very pronounced red fruit aromas and flavours reflect another expression of the terroir in a distinctive style which is less elaborately complex than that of the First Wine.
Consistently reliable and reaching maturity sooner, the wine was created in 1983 in tribute to Yvonne Charmolüe, who ran Château Montrose single-handedly from 1944 to 1960. Production varies from one year to another but accounts on average for 40 à 45% of the total production of the Montrose vineyard. Aged for 12 months in 30% new french oak barrels.

Fukucho Moon on the Water Junmai Ginjo is a premium Japanese sake brewed by one of Japan's only female brewery owners and tojis. Produced by Imada Shuzo, a sake brewery located in the Hiroshima prefecture, the birthplace of Ginjo sake, which is known for remarkably soft water that requires expert skill to use in sake production. This sake is made using high-quality Yamada Nishikii rice, which is polished to a ratio of 55%, resulting in a refined and delicate flavor. The notes of Fukucho Moon on the Water Junmai Ginjo is floral and fruity like lime and melon with bold hints of fennel, white pepper and allspice. Peach, apricot, pineapple and tropical dried fruit aromas. Consistency on the palate, softness and elegance nicely structured by the oak barrels. Wine with great balance, favorable acidity and a well-harmonized residual sugar. Long in the mouth.

Imayo Tsukasa Black Junmai Sake

Subtle hint of umami rich kombu dashi with slight pepperiness ending in warm aroma freshly cooked rice. Dry and bright acidity reminiscent of a Gruner Veltliner or Sancerre followed by rich savoriness with a slight hint of ripe banana in the finish. Savory finish that cleanses the pallet for the next bite.

Benten Sawane Junmai Ginjo Sake

Yamagata prefecture has established itself as one of the top Ginjo and Daiginjo producing region of Japan and backs up the claim with locally developed rice strains best suited for the terroir. Yamagata is the first to implement Geographic Indication (GI). Sawane is currently in review process. The Gokujo has already been approved. Sawane means harmoniously brewed in Yamagata.
Using locally developed Dewanosato rice and Yamagata Ginjo yeast, Sawane opens with a bright and fruity aroma of fresh pear and finishes with a crisp but fruity finish. This sake’s namesake is Benten, the beautiful goddess of wisdom, music and good fortune. May she bring you the best of luck.
