Dassai 39 Junmai Daiginjo is a premium Japanese sake produced by the Asahi Shuzo Brewery, located in Yamaguchi Prefecture, Japan. It is known for its delicate and refined flavor profile, and is considered one of the finest examples of Junmai Daiginjo sake. Junmai refers to sake that is made purely from rice, water, yeast, and koji. Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. Dassai 39 Junmai Daiginjo is made using Yamada Nishiki rice, which is widely regarded as one of the best sake rice varieties in Japan. The rice is polished to a ratio of 39%. This polishing process removes impurities and results in a clean and crisp flavor profile with a delicate aroma. The sake is characterized by a mild sweetness and a smooth, refreshing finish. Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price.Tatenyan (who is a modeled after an actual cat who lives at the brewery) is the Tatenokawa's official mascot. One day she snuck into the brewery as a stray and has lived there ever since.With a reserved aroma, well balanced rice umami and a round flavor, Tatenyan Junmai Daiginjo is great served chilled or at room temperature with sushi, sashimi, or grilled fish. This sake also pairs well with sparsely seasoned meat dishes like pork shabu shabu and yakitori with salt. -

Instead of the classic Niigata style of dry and short, they aim to create a “new” sake, centered on aroma, mellowness and deliciousness. A proprietary yeast lends herbs and acidity. While this is polished to 60% and using Yamagata rice, it’s more fascinating than your typical Ginjo. The nose is freshly expressed lemon skin oils. So fragrant! Then the herbs take over before it finally finishes with drying minerals. -

Takeda Black Skull Tokubetsu Honjozo MNG is made to highlight the local rice, you’ll get giant aromas that change on every revisit. There’s some Ginjo fruit plus a rich caramel leaping from the glass due to the Honjozo (brewer’s alcohol) used to extract extra aroma and texture. Late on the finish, look for cocoa powder. Our four estate-owned vineyards, A-Grade Certified Organic and Biodynamic (ACO), are located in high altitude country of the Clare Valley, each site selected for its potential to produce great wine and planted by Grosset. Each is handpicked and hand pruned; each bunch of grapes harvested at optimum ripeness. Production is tiny. Single vineyard wines are the focus. The winemaking process is gentle and uncomplicated. Custodianship remains with Grosset Wines from grape growing to in-house bottling; authenticity is assured. Delightful floral aromas with hints of lime juice and beeswax - though it's white flowers that dominate. It's almost joyful or playful. On the palate, tight, fine and intense; a pure and unevolved thread of lime juice at its core. It has depth of flavour and intensity in its infancy with the suggestion that these will become hallmarks of the aged wine. -

Famille J. M. Cazes Pauillac is third wine of Chateau Lynch-Bages, a true baby Lynch-Bages. The wine is a perfect expression of Pauillac with complex flavors of tobacco, cedar, and dark berries. Created in 2009, this wine is made with grapes from younger vines, and aged in used oak barrels, offering a ready-to-drink style. A blend of 74% Cabernet Sauvignon, 23% Merlot, and 3% Cabernet Franc, Pauillac 2018 is very concentrated, with high fine grained tannins and a long finish. Excellent quality!
